Easy Chocolate pudding
Keeping prices in mind, I had to change some of my posts for this Ramadhan because I didn't want to upload recipes that require too much hunting for ingredients kind of recipes. While wracking my brain on what to make, I remembered this delicious chocolate pudding recipe I tried during the lockdown. My boys love chocolate and my eldest and husband love desserts, so this was the perfect recipe to make with a few ingredients that are already in the house. I always keep a well-stocked baking shelf, and one thing that is always present in my kitchen is cornflour ( or cornstarch) and cocoa powder. The only thing I had to buy was whipping cream.
I know some of us like to use canned Nestle cream but for this dessert please use whipping cream as it whips nicely and the finished dish looks quite elegant. This takes a few minutes to make, and all you need to do is spoon it into nice dessert bowls or even little cups add a dollop of whipped cream and chill. You can top it with shaved dark chocolate, or even some crushed Oreo cookie.

Chocolate pudding

Ingredients
- 1/2 cup sugar
- 1/4 cup cocoa powder
- pinch of salt ( tiny pinch)
- 1 1/2 tbsp corn flour or also known as corn starch ( please try and use measuring spoons
- 2 cups milk
- 1 tsp vanilla essence
- 1 tbsp unsalted butter ( not margerine) 15g
- 125 ml whipping cream
- 1tbsp icing sugar
- 1 oreo cookie or 1 small bar dark chocolate
Instructions
- Into a saucepan add the cocoa powder, sugar, cornstarch/flour, and tiny pinch of salt.
- Stir in milk, gradually, Whisking as you add so all the dry ingredients get well mixed.
- Add vanilla
- Then place the saucepan over medium heat and cook stirring continuously with a spatula, scraping the bottom so it doesn't catch at the bottom. The mixture will start to thicken after about 10 to 15 minutes, you have to be patient here.
- Once the mixture starts to thicken and you get bubbles popping up, lower the heat and add the butter and stir it in.
- Cook another 2 minutes, keep stirring, and then switch off and let it cool for a few minutes give a stir now and then .
- Then after about 8 minutes, and slightly cool, give a stir and ladle into small serving dessert dishes. I served them in these cute little cups. Leave it to cool on the countertop, while you get the cream ready.
- Whip the cream with the icing sugar using a hand blender or even the regular whisk, until soft peaks. ( to make whisking easier, chill the cream before whisking)
- Spoon on the pudding mix, Crush the biscuit part of one oreo cookie, by placing in a plastic bag and giving it a few whacks with a rolling pin. Top the cream with the cookie crumbs. Or you can chill a small bar of dark chocolate and using a vegetable peeler or grater, grate the chocolate over the cream.
- Chill in the fridge for 2 hours before serving.
Everything is so much more expensive now. Well, best time to fast :-) Good for health and save money too! Your chocolate pudding looks really tempting!
