Curried Sausages


Here in the Maldives, we don't get fresh sausages, have to make do with processed sausages. But there are good ones too like Krest, doux and Gills.
I saw this recipe first in a cookbook called Favorite Everyday Dinners and it's such a simple recipe using ingredients that you already have at home. 

I know eating processed sausages is not a good thing but I think it's okay to eat it once in a while. We eat sausages maybe twice a month and also I am careful about how much I give to the kids. One thing I have to tell you is that you as a parent should set an example to the kids in eating habits and also in mannerisms. If you drink fizzy drinks in front of the kids but refuse to give to your child then it's rather unfair right. I also have to say the same to mannerisms especially when it comes to respecting people, something which is slowly disappearing, it is something that really bothers me as a parent. 

Anyway, back to the recipe, I have used different sausages at different times.  I like to serve this with simple mash or my mashed potatoes with spices and some buttered peas.

Curried Sausages

Prep time: 30 mins Cook time: 30 mins Total time: 60 mins

Ingredients:

  • 8 doux  or  6 Krest chicken sausages or Gills garlic sausages (6)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic
  • 1/4 tsp grated ginger
  • 1 tsp roasted curry powder ( hanaakuri  havaadhu)
  • 1 tbsp butter
  • 2 tbsp oil
  • 2 tsp flour
  • 1 1/2cup hot water 
  • 1 chicken stock cube
  • 1/2 tsp ground black pepper
  • 8 curry leaves
  • 1/2 tsp tomato paste
  • salt to taste

Instructions:

  1. Heat pan with oil, fry the sausages till brown, remove and slice at an angle.  set aside
  2. In the same pan, add onions and saute till they soften and start to go caramelize. Add the curry powder, pepper and tomato paste and mix well, ( add a tablespoon of water to prevent you from getting a coughing fit and prevent the spices from burning)
  3. Dissolve the stock cube into the hot water.
  4. Add butter, once the butter melts, lower heat, add flour and quickly mix it in and while mixing, stir in the prepared stock. Make sure there are no lumps.
  5. Stir in garlic, ginger, curry leaves,  and return the sausages into the sauce. Let the mixture thicken. Taste, add salt to taste. 
  6. Switch off heat. 
  7. Enjoy with some mashed potatoes.
