Oreo Pudding
I know what you are thinking, oreo pudding? I did hear about it during the previous Ramadhan but it was during my trip to N.Holhudhoo where I tasted this dish. The lady who made our meals made this for us and I have to say I actually like this better than I liked the Magnum pudding. She had even added some chopped cashew nuts for crunch. You can use other nuts like chopped almonds or even kanamadhu.
Its a very straightforward recipe, milk is mixed with condensed milk, then cooked to reduce slightly then thickened with cornflour.
Have to remove the cream part of the Oreos, although if you want you can still leave them out but I find it makes it a little too sweet. Once thickened this mixture is added to the Oreo bits and the heat from the milk softens the Oreos and you get this really delicious Oreo mess. If you don't have Oreos or the shops near by don't have try something similar taste like Cremo or Oreo Thins or Mini ones even. You can double the recipe to serve more people.
You have to chill this for at least an hour or two before serving. I would go with two hours as my kids love opening the fridge and poking their heads into the fridge to see if there is anything to eat or in the case of Ramadhan just for the sake of checking out what is made. So let's go with 2 hours to be safe.
Yield: 4-6
Oreo pudding
prep time: 5 mins cook time: 40 mins Total time: 45 mins
ingredients:
- Oreos
- 500ml full cream milk
- 1/2 can condensed milk
- 2 level tsp or 1 heaped tsp of corn flour
- 1 tsp vanilla
- 50g cashew nuts, roughly chopped
instructions:
How to cook Oreo pudding
- Remove the cream filling of the Oreos and break the cookies into smaller pieces.
- Place these on a serving bowl or dish.
- Place milk and condensed milk in a saucepan, whisk to mix and then place on the stovetop and bring to a boil, not a rolling boil but enough to get the bubbles going and not overflow. Bring the heat down a bit and let the milk simmer for a few minutes.
- Remove about 1/4 cup of the milk, stir in the cornflour and mix well and then pour this mixture back into the pan.
- Cook stirring continuously till the milk thickens.
- Switch off the heat and pour this mixture into the bowl of Oreos. Let it cool slightly.
- Sprinkle the cashew nuts on top. Then chill in the fridge for a few hours before serving.
That sounds and looks like a very decadent treat!
