Blueberry And Banana Muffin


Happy New Year, and I am back to blogging !!!! Yey!!! hope you had a great holiday month and New Year....  We had a blast, and visited Singapore and also our relatives in Kulhudhufushi. Now school holidays are almost over and its back to our usual daily routine, well almost....

Its a New Year Year, so decided to start the year with something healthy.  Blueberries are pretty expensive over here and during our visit to Singapore I brought home a few punnets of blueberries and strawberries, the boys wolfed down two while I hid the other two in the freezer.
They did create a fuss when they found out, but my excuse was, you two had your share now this is mine LOL, and you still get to enjoy them just a little differently.

These blueberry and banana muffins are delicious as a tea time treat and also for breakfast and I am pretty sure this will be great for school snacks as well... I made mine healthier with the addition of quick-cooking oats.

Banana and Blueberry Muffins : recipe inspired  by Banana Chocolate chip muffins  recipe   from Ahead of Thyme .

Makes about 12

3 small bananas ( roughly 1 cup when mashed)
1/3 cup  corn oil( use any kind of neutral oil)
1 egg
1/4 cup milk
1 tsp vanilla essence
1/2 cup brown sugar ( or regular sugar)
1 cup plain flour
1/2 cup quick cooking oats
1 tbsp baking powder
pinch salt
1 punnet blueberries

Preheat oven to 180 degrees C, and line a regular muffin tray with cake cases...

Take two bowls. Into one bowl sift flour,  add salt, sugar, baking powder and oats, mix with a spoon and set aside.

In the second bowl whisk the egg and oil. Then the bananas, milk vanilla essence .

Make a well in the centre of the bowl of flour mixture. Pour the contents of the second bowl into the well you made in the flour mixture. Add the blueberries. Mix with a spoon, do not over mix it has to be a lumpy batter.

Spoon into the prepared paper cases, 3/4 full. Pop into the preheated oven for 25-30 mins.  The cooking time really depends on the oven you have...

  8. MashaAllah! great start of the new year! A vacation to Singapore in on our cards too (even maldives :P) Those muffins looks so perfect! Blueberries or any berries - I cant have on their own.. has to be blended or bakes or pureed! :-P Tell me about boys! even my big boy scoffs when he gets to know I have hid some packs of cashews or chips! :-D
