Green Bean Salad


This is one of my favourite salads to make, especially as an accompaniment to fish dishes, especially my mum's potato pie. Its a very easy dish and best made just before serving. You can make the dressing earlier but blanch the beans just before serving and toss in the dressing while still warm. It's a Jamie Oliver recipe which I found in one of my favorite books Jamie's Dinner's. 

Recipe : Green Bean Salad , recipe from Jamie's Dinners

200g green beans
Dressing
5 tbsp olive oil preferably extra virgin
2 tbsp white grape vinegar
¼ tsp mustard
1 small clove of garlic
2 tsp water
1 spring onion, finely sliced
Salt
Pepper

Make dressing :  Mix everything in a small clean glass bottle ( like an empty and cleaned jam jar) or a small bowl. The bottle method is easy as you just put everything in it , put the lid on tight, and give it to your child and ask them to give it a good shake. Taste and adjust the seasoning and add the spring onions

String the beans, and cut them into bite-sized pieces. I like to cut at an angle so the beans look more pretty.  

Bring a pan of lightly salted water to a boil. Add the green beans and boil for 5-8 minutes till just tender, remove and drain and add to a bowl.

Add the dressing and mix it with the beans. Serve as soon as possible.
