Mum's Potato Pie
My mum makes this lovely pie with potatoes and canned tuna and it's great comfort food. It's something she makes very often and my boys love this comforting pie. It is easy to make and can be made ahead of time
800 g potatoes, boiled and mashed
2 small white eggs slightly beaten or 1 if large.
1/4 cup corn or sunflower oil plus extra for greasing
1 can tuna ( 180g tins) drained, flaked
1 medium onion, finely sliced
1-2 green or red chillies finely sliced or 1/4 piece of scotch bonnet pepper
Juice of 1 lime or ½ lemon
Salt and pepper( generous pinch of pepper)
Optional: you can use chives in the tuna mixture if you want to add more flavour or parsley.
1. Place potatoes in a large bowl, add the beaten egg, and 3 tablespoons of oil, and mix well. Set aside.
2. In a separate bowl add your onion slices, lime juice and salt. Using your fingers scrunch the onions till they go soft and release their juices.
3. Mix in flaked tuna, chillies, pepper and herbs if using. Mix well, adjust seasoning if you need to.
4. Grease a baking tray, about an 8-inch round tray, with oil. Rub a little oil in your hands take half the potato mixture and pat it down the bottom of the tray till it covers the hold bottom.
5. Then spread the fish mixture on top. And then finish with the remaining potato layer.
6. Bake in a PREHEATED OVEN AT 220 degrees Celsius oven for 45 minutes to one hour till nice and brown in the middle of the shelf
7. Serve with green peas, a green bean salad or a green salad
It is such a lovely pie! This reminds me of my canned tuna in the cabinet. Will try this recipe soon. Tks for sharing.
