Mini Cheese Cakes


During the Ramadhan month, I stuck to simple recipes. I usually did the prep work in the morning and then finished cooking later in the afternoon. The boys helped in the cleanup, little guy wipes the dishes while the fussy one puts them away.

Anyway enough talk,  I was flipping magazines online in my newly discovered website called issue. com, when I came across this recipe in a magazine called Asda.
 I tried this for Iftar (that's the time when we break the fast at sunset).  Its the kind of recipe where you can get the things ready assemble an hour ahead and leave to chill ( do not make this too early as the biscuits end up soggy and fall apart, so 1 hour ahead of serving time, is the best time).  The boys helped to assemble it, although I am pretty sure half of the berries went into their mouths rather than on the cheesecake.

Recipe :  Mini Cheese Cakes recipe from Instant cheese cakes from Asda Magazine's September 2013 issue.

200g  cream cheese ( I used Emborg )
2 tbsp icing sugar sifted
1/2 tsp vanilla essence
raspberry jam or preserve ( I used Bonne Mamman)
about 12- 16 marie biscuits.
1 small punnet blueberries

Place cream cheese in a bowl along with icing sugar and vanilla and beat well.

Arrange the biscuits in a tray or serving plate, and spread with a tsp or two of raspberry preserves or jam.

  Top with a spoon or two of cream cheese and then a few blueberries.

Chill for an hour and serve !!. These are delicious!!   Perfect little treat after a meal.

Ps. This little treat is a great recipe for the kids to try their hand at cooking, as the method is very easy and no cooking involved.
