Rim's Eid Day Pudding


Rim is the latest addition to my hubby's family, she married my brother-in-law last year and is a wonderful cook.  She brought this delicious pudding to my mum-in-law's home last Eid day and it went down pretty well.
It is a very easy dessert to make and I got the recipe from her.  Her version was quite a big quantity so I reduced it and made it a few times for my mum,  who loved it.   If you can't get Oreos any dark chocolate cookies with vanilla cream centres would do.

Recipe: Rim's Eid day Pudding 

600ml full cream milk
1 cup sweet condensed milk
35g corn flour/corn starch
1 tsp vanilla essence
50g sliced almonds or use sliced kanamadhu
6-7 Oreo cookies

Pour milk, condensed milk and cornstarch into a blender along with vanilla essence. Blend well.

Pour into a saucepan and cook stirring constantly over moderate heat.  Once it starts to thicken       ( should leave a clean line when you swipe across it on the back of the spoon) m but is not too thick! it will thicken and cook even when you switch off the heat.

 Remove from heat, stir in almonds and pour into a serving dish, I used an 8-cup capacity dish.

Place the Oreos in a food processor and grind to a fine powder( or place in a zip lock bag and bash with a rolling pin till fine) Sprinkle it generously all over the surface of the pudding.

Cool completely and chill for 1-2 hours before serving. You can make this in individual glasses when serving it at a dinner party.   Enjoy!!

  4. This looks like a lovely dessert to enjoy with the family! Looks yummy!
    Regarding the tomato plant, I would trim the suckers off the stems so that more nutrients would go to the stems with tomatoes. And watch out for the mealy bugs, they seem to love tomato plants. They would usually hide under the leaves and would spread to the whole plant pretty quickly. Remove them manually as soon as you spotted any before they start to spread. I find that organic spray and neem oil spray do not seem to work, I remove them manually by using a wet cloth or thick layer of wet tissue, or simply use your wet hands. My tomato plants died because of these mealy bugs, they seem to multiply overnight. I hope that you would not have this problem and your tomato plants would give you lots of harvest!
