Sausage parcels

 


My youngest son, Amr,  raved about these "kulhiko hadhaafa huri" sausages ( spicy sausages) that he ate at one of his friend's birthday party.  I wanted to create a recipe that uses leftover flatbread, locally known as roshi.

You can even use chapatti or tortillas as well. So I made a batch of sausages kulhimas style, and once it was cool, used it as a filling and made these delicious parcels. These are brushed with garlic oil and baked.

Recipe: Spicy Sausage parcels

Ingredients:

  • 7 sausages, ( these are those processed sausages, not fresh ones), 
  • 1 small onion, finely chopped
  • 2 cloves garlic, grated
  • 1/2 tsp chilli powder, add a bit more if you like it more spicy.
  • 1/2 tsp ground black pepper
  • 1 tsp tomato paste
  • salt to taste
  • 2-3 tbsp oil
  • 12 cooked roshi or tortilla (6-inch ones)
  • handful of grated mozzarella cheese 
 
For garlic oil, 
  • 1 clove of garlic, grated
  • 2 -3 tbsp olive oil
  • pinch dried herbs

Method:

  1. Prepare the filling by frying the sausages first in oil till brown. Then slice thinly and set aside.
  2. In the same pan, fry the onion until translucent and starting to colour. Add the garlic, tomato paste, spices and a little splash of water. Cook for a minute or two for the spices to lose their raw taste, don't let it reduce too and catch and burn. Stir in the sliced sausages and stir to coat and cook for another minute. Taste and add salt. ( since it's fasting month, I would say about 1/2 tsp salt will be fine).
  3. Switch off and cool completely.
  4. Mix 2 tbsp flour and water to make a paste. 
  5. Take a roshi, place a tablespoon of sausage filling in the middle of the roshi,  sprinkle some cheese and then fold the sides in and roll it up tight sealing the edge with flour paste. Repeat with the rest.
  6. Mix garlic, dried herbs and oil together. Set aside
  7. Preheat oven to 200 Degrees C. 
  8. Arrange all the rolls on a lined baking sheet. Brush with the garlic herb oil. Bake for 10- 15 minutes in the middle shelf until golden brown.
