Beef and Mango stir fry


One of my favorite YouTubers is this Chinese girl from Yunnan province who lives on a farm with her grandparents. I  love checking out different YouTubers from different countries and there is something so sweet and homey about her videos that you are left with this warm happy feeling when it's done. This recipe was in one of her older videos, where she uses green unripe mangoes to make various dishes. 

She made this delicious-looking stir fry using beef and mangoes and it looked so easy and quick to make that I just had to try. What surprised me the most was the amount of chillies they use in that area. I used a red bell pepper instead and added a couple of chillies for heat. 


As for the meat, I  used beef tenderloin which needs very little cooking time.

Beef and Green Mango stir fry

Ingredients

  • 280g beef tenderloin,
  • 2 tbsp light soy sauce
  • 1 tsp cornflour/corn starch
  • 1/2 " ginger, grated
  • 1/2 tsp ground black pepper
  • pinch salt
  • 1/2 tsp five spice powder( optional)
  • 2 small unripe green mangoes
  • 1/2 red bell pepper, cut into strips
  • 4 green chillies, thinly sliced
  • 4 tbsp oil
  • salt to taste
  • 1/4 cup water

Instructions

  1. Slice the tenderloin into thin pieces and then into strips, place in a bowl and add soy sauce, cornflour, ginger, pepper, a pinch of salt, and five-spice powder (if using) and set aside for a few minutes to marinate.
  2. Peel the mangoes and cut them into thin slices and then strips.
  3. Heat oil in a wok or wide frying pan, once it's hot, flame on high, add the beef strips, and stir fry on high heat for 5 -8 minutes. Remove to a plate.
  4. Add the bell peppers, chillies and stir fry for a minute and then add a little water just enough to clean the bottom of the pan. Then return the beef into the pan and stir fry.
  5. Add mangoes and stir fry for another minute or two. Taste adjust seasoning, And then remove and serve immediately with rice.
