Spicy Sweet potato fries


 These are addictive. The sweet taste of the sweet potato compliments the fiery taste of the lonumirus curry powder. I used store-bought powder. If you don't have any make your own by mixing dried red chilli powder, ground black pepper,  ground cumin and a little garlic powder.  I have made these using both orange and white sweet potatoes.They are baked and so are healthier.  I love making these as a late afternoon snack for the boys to enjoy.

Spicy Sweet potato chips

Ingredients:

  • 400g sweet potato
  • 1 - 1 1/2 tsp lonumirus powder ( see notes below to make your own)
  • 3 tbsp olive oil
  • salt about 1/2 tsp

Instructions:

  1. Peel the sweet potato or scrub the skin. Slice into batons. 
  2. Place in a bowl, add the lonumirus powder, salt and olive oil and toss to coat.
  3. Preheat oven to 200 degrees  C, 
  4. Arrange the sweet potatoes on a baking tray lined with baking paper ( or use a non-stick baking tray), make sure they are all in a single layer.
  5. Pop into the oven and bake for 30- 45 minutes. The sweet potatoes should colour.  Can give a shake halfway through the baking. 
  6. Remove and enjoy!

Notes:

If you don't have lonumirus powder, which is a type of chilli powder-based curry powder, mix 1 tsp dried red chilli powder, 1/2 tsp ground black pepper, 1/2 tsp ground cumin and 1/4 tsp garlic powder and stir into the sweet potatoes
