Chicken Souvlaki
Souvlaki is a Greek grilled meat dish. Pieces of meat are marinated in a simple marinade and then threaded onto skewers and then grilled on the barbeque. You can either pop these on top of the barbeque or cook over a grill pan as I have done or if you don't have a grill pan just pop into the oven.
I referred to Rick Stein's Pork Souvlaki recipe, substituting boneless chicken breast instead of pork. Be careful when cooking boneless chicken breast as it tends to cook fast and dry up quickly. It might look it still needs time but take them out soon rather than keeping them cooking.

Chicken Souvlaki
Ingredients:
- 2 pieces of chicken breast, boneless, cut into bite-size cubes
- Juice of 1/2 lime
- 1/2 tsp chilli flakes
- 2 cloves of garlic, grated
- 1/2 tsp dried oregano or dried herb mix
- 1/2 tsp salt
- 1 tbsp olive oil
- 4 bamboo skewers
Instructions:
- Soak the bamboo skewers in water for an hour, this stops them from burning.
- Mix all the spices and herbs, lime juice and olive oil along with salt add this to the chicken cubes and leave to marinate for an hour.
- Thread onto bamboo skewers.
- Heat a grill pan and once it's very hot place the skewers on the pan and cook turning the skewers now and then. Cook for 10 minutes.
- If you don't have a grill pan a regular non-stick pan will also work.
- Or you can pop them in a hot oven, arrange on the oven tray cook for about 10- 15 minutes, and keep an eye on it so it doesn't overcook.
- Enjoy with some pilaf and garlic sauce.
