Apple pancakes
Happy New Year! During the lockdowns in 2020 and earlier months of 2021, when we ran out of bread, I preferred making pancakes to making bread. Even though I enjoy making bread, pancakes are easier to whip up and the family enjoy them. Any leftovers can be stored in the fridge for a few days and reheated in the toaster.
After making the different types of pancakes for the boys I wanted to add some flavour to my pancakes. Having made blueberries and chocolate chip ones now and then I wondered if I could make them with some apple. So I used the same recipe as for my pancakes but instead of using one cup of flour I used 3/4 cups flour and added 1/4 cup of ground oats. You can use 1 cup of plain flour instead if you want to leave the oats out.
Then after adding the remaining dry ingredients, I whisked in egg, milk, oil, and a little vanilla essence in a smaller bowl. Then add this into the dry ingredients. After a gentle mix, I added a grated apple. Since apples and cinnamon went well together I added some cinnamon and used a mixture of brown sugar and white sugar for some sweetness. Just don't over-mix the batter, as for muffins pancake batter should be lumpy and not be vigorously mixed
Then it was the same as for regular pancakes, just add a knob of butter into a small frying pan, add a ladle of batter into the saucepan and cook over medium heat. Flip onto the other side when you start to see little bubbles or pockets form on top.
Apple pancakes
Ingredients
- 3/4 cups flour
- 1/4 cup ground oats ( I ground regular quick-cooking oats)
- 2 tsp baking powder
- pinch salt
- 1 level tsp of ground cinnamon
- 1 tbsp white sugar
- 1tsp brown sugar
- 1 tsp vanilla essence or extract
- 1 cup milk
- 2 tbsp vegetable oil
- 1 egg
- 1 apple, peeled and coarsely grated
- butter to grease the pan
Instructions
- Sift flour into a bowl, add oats, pinch of salt, baking powder, cinnamon and the sugars and mix and make a well in the centre.
- In a separate bowl, whisk in eggs, oil, milk and vanilla.
- Pour this into the flour mixture and gently mix so the whole thing is well-mixed.
- Stir in the grated apple and mix. It should be mixed but still, have a few lumps.
- Heat a small frying pan over medium heat. Add a small knob of butter, spread it around and let it melt.
- Ladle some batter into the pan, and gently spread it around a little.
- Let it cook for a minute, and when you see little bubbles of pockets form on top, flip it over to cook the other side.
- Remove to a plate. Repeat the same with the remaining batter, grease the pan in between each addition of batter.
- Enjoy with some syrup or honey.
