Valhomas Aglio Olio
Aglio Olio seems to be a big favourite these days. I like to make it as well as it is easy to make a few ingredients and can be made in less than 30 minutes. Nowadays I try to come up with simple recipes, that use easily available ingredients.
Since Aglio Olio-style pasta is a big favourite with the kids and the husband loves his smoked tuna, I combined the two. This one is so much easier than the usual Valhomas spaghetti that I usually prepare.For this recipe, there are very few ingredients as you can see below.
I like to toast the dried chillies, but only if I have the time so totally up to you but it really does increase the flavor when you toast them a bit.

Valhomas Aglio Olio
Ingredients
- 75-100g vacuum-packed smoked tuna (valhomas)
- 4-5 garlic, sliced thinly
- 3-4 dried chillies
- 1 large sprig of curry leaves
- 4-5 tbsp olive oil
- water to cook pasta
- salt
- 300g Spaghetti
Instructions
- Bring a pan of water, seasoned generously with salt, to a boil.
- While the water boils, thinly slice the smoked tuna, and heat a large frying pan. Place the dried chillies in the pan and toast it a little. Switch off the heat, once it starts to turn colour. Cool and roughly chop.
- Finely slice the curry leaves.
- Now once the water starts to boil vigorously add the spaghetti into the water and let it cook until al dente'.
- While the pasta cooks, heat the frying pan again with olive oil and add the garlic, while the oil is still cold.
- Let the garlic start to heat up and start to colour, add the chillies and the smoked tuna and stir fry.
- Add 2-3 ladles of water from the pasta pot, into the frying pan. Stir and let it simmer.
- Using a pair of tongs, transfer the pasta into the frying pan, adding some extra water if it looks too dry. Toss to coat in the sauce. Have a little taste, adjust salt.
- Stir in the curry leaves, and I like to add a little squeeze of lime as well. Toss well, and serve immediately.
- Optional, if you have any, serve with some parmesan cheese grated on top.
Don't know about aglio olio, but pasta is always good for carbs lovers.
