Danish Apple cake


 I wanted to make something simple and came across this recipe called Apple cake (AEblekage) although it is really a trifle. I would say it is very healthy too since it has  oats and apples. 

I found this recipe but made a few changes to it. One was toasting the oats mixture before using it.

 This gave it a nice crispy granola-type texture which went well with the cooked apples. This is a great recipe for apples that are looking slightly old or losing their crispiness. Let us try and reduce food waste.

Danish Apple cake

Ingredients:

Apple filling
  • 6 apples ( can be a mix of red and green), approx. 400g
  • 4 tbsp sugar
  • Tsp vanilla essence
  • ½ cup water
Oat crumble
  • 100g quick-cooking oats
  • 25g butter
  • 75g sugar
Whipping cream and extra
  • 250 ml ( 1 cup) whipping cream or Nestle cream
  • 2 tbsp icing sugar
  • A small piece of dark chocolate ( chilled ) or a teaspoon of cocoa powder

Instructions:

Apple filling
  1. Prepare the apples by peeling, coring and slicing the apples into thin slices or chopping them up.
  2. Place in a saucepan along with sugar, and water and let it boil then simmer till the apples soften. Mash to a rough pulp. Add vanilla and let it cool.
Oat crumble
  1. Make the oat crumble. Place butter in a saucepan, along with sugar and let it melt and the sugar dissolves into the butter, keep stirring occasionally so it doesn’t burn.
  2.  Stir in the oats and mix it through to coat with the mixture and then spread on a lined baking sheet.
  3.  Pop into a preheated oven at 160 degrees for about 10- 20 minutes to lightly brown the mixture.
  4.  Remove and let it cool. Using your fingers crunch them up.
Assembling the "cake"
  1. Whip the cream with icing sugar.
  2. Now to layer the “cake” place a layer of apple pulp in the bottom of a small serving bowl. Then layer with the oat mixture, then a layer of cream. Repeat with a second layer of each finishing with cream. Top with grated chocolate or sifted cocoa powder. Chill till it's time to serve.
You can make one big trifle or small individual  ones.
