Chocolate Paan Boakibaa ( chocolate bread cake)
Pann boakibaa is the Maldivian version of bread pudding although it is more like a cake than a pudding. I love the original paan boakibaa but while working for easy recipes I thought about what I can do to elevate this beloved dish. So I made a chocolate version of it. My eldest .who doesn't like paan boakibaa actually loved it, well he does like everything that's chocolate. So have a go and let me know what you think of it.
Chocolate Paan boakibaa ( chocolate bread cake)
Ingredients:
- 6 slices sandwich bread ( if small slices, 8 slices), preferably old bread.
- 1 can condensed milk
- 2 tbsp sugar
- Half a can of water
- 2 large eggs or 3 if small
- 4 level tbsp cocoa powder, sifted
- 1 capful vanilla essence, roughly 1 tsp
Instructions:
- Beat the sugar and eggs in a mixing bowl till well mixed. Add condensed milk water and vanilla essence. Stir in cocoa powder.
- Place the bread in a food processor and pulse it into crumbs. ( if you don’t have any processor use your fingers to break it down into small pieces.
- Add the breadcrumbs into the bowl containing the egg mixture. Stir to combine. Leave to soak for half an hour or more.
- Preheat oven to 200 Degrees C. Grease an 8-inch round baking pan with butter or margarine.
- Pour the breadcrumb batter into the tray and bake in the middle of the oven for about 30 to 45 minutes, till the cake is set and a skewer comes out clean.
- If the cake tends to puff up and crack, open the oven door for a few seconds and then close. This is happening because the oven is getting too hot.
- Remove the cake from the oven once it's done and cool in the tin. Cut into squares once it is cooled completely.
This is a great idea, esp. when you have some days old bread left. Would be wonderful top with a scoop of white chocolate ice cream :-)
