Honeydew Ice pops
I love making ice pops or ice lollies. Especially on a hot day, an ice pop really helps to cool off. You don't really need to have an ice pop mould to make them as I have learned you can use empty yoghurt cups, or muffin cups. Popsicle sticks are now easily available even in bookshops and craft shops. If it is not available a toothpick even works.
I like to buy a whole honeydew, usually during the beginning of the month of Ramadhan, cut it into small cubes and freeze it. I just use the amount I want for juices and in this case for making lollies.
Yield: 8
Honeydew Ice pops
Ingredients:
- 2 cups chopped honeydew.
- 1 cup water
- 6 -8 tbsp sugar
Instructions:
- Place all the ingredients in a blender and blend till smooth. Pour into moulds and pop in the freezer.
I haven't had an ice pop in ages! Still a little too chilly here for one, but in a couple of weeks these will be mighty appealing. Good stuff -- thanks.
