Mediteranian salad


This refreshing salad goes well with my mujadara recipe. Its even nice on its own with some chicken. or grilled tuna.
Most ingredients are quite easy to find hopefully, if you can't get any black olives just leave it out. I skipped the feta cheese but you can use some if you have any.

Yield: 4 as a side and 2 as a meal

Mediterranean Salad

Prep time: 20 mins  Total time: 20 mins

Ingredients:

  • 1 small cucumber, 
  • 2 plum tomatoes
  • 1/2 small onion, finely chopped
  • 8-10 black olives
  • 1 small some lettuce ( either romaine or  iceberg lettuce)
  • juice of 1/2 lime 
  • a little olive oil ( about 2 -3 tsp)
  • a pinch dried thyme (optional)
  • salt and pepper (freshly ground black pepper)

Instructions:

How to cook Mediterranean Salad

  1. Cut the cucumber into small pieces, about half-inch pieces.
  2. Cut the tomatoes into the same size.
  3. Place in a salad bowl along with chopped onion, and cucumber.
  4. Remove the pit or stone of the olive and halve and place it in the bowl as well. 
  5. Roughly shred the lettuce and add to the bowl ( about 1 cup of lettuce )
  6. Drizzle with olive oil, salt, lime juice, thyme if using and pepper. Toss and taste.
  7. Serve immediately.
