Tiramisu on a budget


I made tiramisu a long time back and never made it again. One reason for this was the raw eggs. We don't get fresh free-range eggs. I don't trust the ones we get here because when I check for freshness by placing the egg in a glass of water, it tends to float up on one end rather than sink completely at the bottom. Sometimes the white is bright yellow, which I usually throw away not sure why the white has to have the yellow colour.
So I stay away from making recipes that have raw eggs. The other thing was that mascarpone cheese was so expensive. I want my recipes to be easy and also not break your wallet, yeah maybe some recipes require a few expensive ingredients but I try to minimize it.


So with that in mind, I looked around for egg-free and mascarpone-free tiramisu recipes. Italians and tiramisu purists can look away, please.


I found this recipe where there are no eggs and also the recipe used cream cheese instead of mascarpone cheese. I used the Emborg cream cheese along with canned Nestle cream which is also available and also cheaper than the packets of whipping cream.

 First I whipped the cream with sugar and then added the cream cheese, and vanilla and whipped till nice and creamy.

Instead of Ladyfingers ( no not the vegetable), I used Marie biscuits 😮! I dipped each biscuit in hot coffee and arranged them in a layer at the bottom of a nice serving dish.


 Then spread some of the cream cheese mix, then again another layer of Marie biscuits till everything is used up.


Then on the final layer of cream cheese, I sprinkled some cocoa powder and chilled the pudding for 2 hours or longer if possible. Serve!

ingredients:

Biscuit layer
  • about 2 packets of Marie Biscuits or 1 large packet
  • 2 heaped tsp instant coffee
  • 1 cup hot water
  • cocoa powder to dust, about 1-2 tsp
Cream cheese layer
  • 1 can Nestle cream 
  • 50 ml milk
  • 1 tsp of vanilla essence
  • 200g cream cheese
  • 1/2 cup sugar

How to cook Tiramisu on a budget

Cream Cheese layer
  1. Dump the contents of the Nestle cream into a mixing bowl. Add milk and sugar and whisk for a few minutes. ( If the sugar is very coarse, grind it a little before use or use castor sugar).
  2. Add the Cream cheese, and vanilla essence and whisk again till nice and creamy.  Set aside.
Marie biscuit layer and assembling the Tiramisu
  1. Spoon the coffee into a mug and pour  1 cup of hot water into it and stir. Cool a little and pour this into a shallow bowl. The coffee should be warm, not hot. 
  2. Dip some Marie biscuits into the coffee and arrange them in a single layer at the bottom of a deep rectangular (if u have one) serving dish. Or use any deep serving dish you have at hand. 
  3. Once you have a layer of biscuits, spoon some of the cream cheese mixture on the top of the biscuits and smooth it out. 
  4. Repeat with the second layer of Marie biscuits dipped in coffee and another layer of cream cheese then the last layer of biscuits and final cream cheese layer.  
  5. On the final layer of cream cheese, sift some cocoa powder all over the top layer, so that it covers the top completely. Cover the dish with foil or cling film and chill for at least 2 hours or even several hours before serving.
