Chocolate and cherry cheese cake



My hubby used to travel a lot, thankfully it has reduced this year., to the islands and abroad. Sometimes he gets the chance to visit somewhere new and I always tell him to get a cookbook from that particular country. Once he visited Cyprus.  He returned with a cooking magazine, it had loads of lovely recipes but it was in Greek. Like literally!.

I told him how am I supposed to make anything when it is in greek!.



  While leafing through the magazine, this recipe caught my eye. It looked so yummy and thankfully had step-by-step photos but I still needed to know about the ingredients.


So I  found this Greek alphabet website, then  I painstakingly wrote down the recipe in Greek and then uploaded it to Google translate

These delicious little treats are like a black forest sort of chocolate and cherry cheesecake. I replaced the chocolate biscuits with Oreos, you can use any type of chocolate sandwich cookie.

To make these delicious little treats, separate the Oreos into two.  Place the cream-sided cookie inside the paper cupcake case, the cream side facing up. Place these cupcake cases in muffin trays although in the recipe book, they didn't use a muffin tray just lined a baking sheet with these cupcake cases.

With the Oreo cookies that didn't have the cream, had to be bashed up into crumbs. Can do this by placing them in a food processor and processing to a crumb or placing them in a plastic bag and giving a few wacks with a rolling pin, set aside.


Now to make the cream cheese layer, I used Elle' and Vire cream cheese tubs. Whisked the cheese till creamy then added cocoa powder and sugar and whisked it all along with one large egg.
This is spooned into the prepared cupcake, make sure you spoon even amounts into each case.


Now sprinkle some cookie crumbs on top of the cheese mixture.


 Then pop into a preheated oven of 160 Degrees C for 20 to 25 minutes.

Remove the tray and cool. Spoon cherry halves on top of each cheesecake.


Chill for at least an hour and serve with a dollop of whipped cream.  Make sure you don't end up with cream on your nose!😃

Chocolate and Cherry Cheesecake

prep time: 20mins cook time: 25mins total time: 45mins +  1 hr chilling time

ingredients:

  • 12 oreo biscuits
  • 400ml cream cheese ( I used 2 tubs of Emborg cream cheese)
  • 1/3 cup cocoa powder
  • 3/4 cups sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 can of cherries in syrup, syrup drained off, cherries halved
  • whipped cream to serve

How to cook Chocolate and Cherry Cheesecake

  1. Preheat oven to 160 degrees C.
  2. Line a muffin tray with cupcake cases.  ( can line a regular baking tray with the cupcake cases, if you don't have a muffin tray.)
  3. Separate the Oreo cookies and place the cream-sided cookie half in the cupcake case, the cream side facing up.  Set aside.
  4. Place the remaining half of the cookies in the food processor and process into crumbs. Or place in a plastic bag and give a few whacks with the rolling pin.
  5. In a mixing bowl, cream the cream cheese with a whisk or electric beater.  Add in cocoa, and sugar and whisk to mix well.  Beat in the egg and vanilla essence.
  6. Spoon the mixture into the cupcake cases. this should come like about half of the cupcake case. 
  7. Sprinkle the cookie crumbs on top. Place in the oven and bake for 20 - 25 minutes.  
  8. Remove,  from oven and remove the cake cases from the tray and on to a serving tray.  
  9. Top each cheese cake with a few cherry halves. Chill in the fridge for at least 1 hour. 
  10. Serve  with a dollop of cream .
