The "egg"


I love to pull my kids' legs sometimes. I saw this quick recipe called the fried egg in an ASDA magazine on Issuu app.  You can't even call it a recipe as its just a smear of Greek yogurt with an apricot half on top. For years I have wondered how I can create a pannacotta egg like the one Heston Blumenthal created once on one of his TV shows.


Anyway, I wanted to create an egg like the one in the magazine but decided to go with a yoghurt pannacotta rather than just a smear of yoghurt. I let the pannacotta set in individual saucers. For the yolk, I used a slightly trimmed peach half from a can.

Can serve it from the serving platter itself or just run a warm knife carefully around the edges and turn the plate/saucer onto a larger serving plate. Top with a slightly trimmed peach half.  It does look like a real egg right.  Should have seen my older guy's face LOL. I served it to him as his snack before he went for his swim. He came armed with his knife and fork ready to face his sworn enemy, the egg LOL. Gives it a few pokes and discovers the peach and goes "Hey this not an egg!." Tastes a bit of the pannacotta and goes"  Oh, I like this egg!"

ingredients:

  • 1 cup full cream milk
  • 1/2 cup sugar
  • 1 cup plain yoghurt ( preferably Greek yoghurt), whipped slightly 
  • 1 tsp vanilla essence 
  • 2 level tsp gelatin 
  • 3 tbsp cold water
  • 1 small can of peaches or apricots

How to cook The "egg"

  1. Pour cold water into a small bowl, sprinkle the gelatin on top and let it " bloom " for a few minutes.
  2. Heat the milk in a saucepan, just to warm it up, not boil. 
  3. Add sugar and stir to dissolve.  
  4. Remove from heat and stir in the gelatin and stir quickly, can do this over very low heat on the stovetop. Do not let it boil or overheat as it will " kill" the gelatin. 
  5. Once the gelatin has dissolved, switch off the heat remove it from the stovetop and let it cool a little. 
  6. Add into the whisked yoghurt, along with vanilla essence. 
  7. Quickly pour into saucers.  Or small plates if you don't have any cups and saucers. This one was enough to fill 5 saucers.
  8. Place in the fridge and let it chill and set.  It will set within 1 and a half hours to 2 hours.  
  9. To serve, warm a knife by plunging it in hot water, run it around the edge of the pannacotta and carefully turn it over onto a larger serving plate. Or you can just serve it as it is.
  10. Carefully trim the edges of a peach slice and place on top. 
  11. Serve.
