Kanamadhu muffins


Kanamadhu or Indian Almonds or sometimes called sea almonds is an elongated nut that is grown locally. Although compared to the old days these nuts are becoming a bit scarce due to the cutting down of its trees. But a few years back kanamadhu cake was introduced.
  I am not a big fan of kanamadhu cake.  I love kanamadhu boakibaa more than I love the cake but I love using this nut in other nut-based dishes such as the kanamadhu pie. Anyway, I saw this pecan pie muffin and decided to use kanamadhu instead of pecan and believe me when I say these are absolutely divine!!!.

The ingredients are pretty simple. If you can't get any brown sugar just replace with regular sugar although you might not get that caramel taste. The butter needs to be at room temperature.


*You need to grind the nuts before using. Not tooo fine and not too coarse either.

Kanamadhu Muffins

prep time: 15mins Cook time: 25mins  total time: 40 mins

ingredients:

  • 3/4 cup sugar
  • 1/4 cup light brown sugar ( or replace with regular sugar if you don't have it)
  • 1/2 cup flour
  • 150g butter
  • 1 cup kanamadhu ( ground in the grinder, not too fine though)
  • 1 tsp vanilla essence
  • 2 eggs

instructions:

  1. Preheat oven to 180 degrees C
  2. Line a muffin tin with paper cases.
  3. In a bowl cream butter and sugars together.  Add in the eggs and vanilla essence and mix well.
  4. Sift the flour into the bowl and then stir it in along with the ground kanamadhu. 
  5. Do not over-mix. Just stir to combine everything. 
  6. Carefully spoon into the cupcake cases and bake for about 20 minutes.  Remove from the oven and remove the cases from tin and then let it cool.  
  7. The top will be slightly crusty but the inside will be nice and moist. 
  8. Enjoy!
