Aluvi riha ( potato curry)

My sister moved to Auckland New Zealand last year and her apartment in our home is rented by a lovely lady and her family. The lady who came to live there with her family is a real foodie and loves to share her food and recipes.
I once stopped her while she was heading to her floor after returning from work just so I could learn a few recipes from her. This is one of the recipes she told me along with the magnum pudding recipe I posted earlier.
The onions, according to Anth, need to get really golden almost burnt.

For the smoked tuna, use the supermarket ones, rather than the ones you get from the market. Slice them thinly.

Lonumirus havaadhu  is the dry spice powder with the same components used for the chilli paste, lonumirus. If u are living abroad and don't have any, try making the lonumirus paste and adding 1/2 tsp into this instead of the spice powder, lonumirus havaadhu.

This curry goes very well with Mugu bai, ( will be posting the mugu bai or dhal and rice pilaf, recipe soon).

Aluvi Riha (potato curry)

ingredients:

  • 1 medium onion, thinly sliced
  • 1 large potato or 2 small ones, cut into  bite-size cubes
  • 1/2 tsp grated ginger
  • 2-3 cloves garlic, grated
  • 1 sprig ( 12 leaves) curry leaves
  • 1 ( 8-10 inch) pandan, cut into large pieces
  • 1 or 1  1/2 tsp lonumirus havaadhu store-bought (see note)
  • 1 level tsp tomato paste
  • 1 small fillet slightly dry smoked tuna, thinly sliced ( see note)
  • water
  • 1/2 cup coconut milk ( canned or packed or powdered, see note)
  • oil (3 tbsp)

instructions:

  1. Heat oil in a suitable pot.
  2. Add the onions and saute till the onions caramelize.
  3. Add the curry leaves, pandan, and smoked tuna and stir fry for 2 minutes.
  4. Add the garlic and ginger and stir. Add the potatoes and mix them into the onion mixture.
  5. Add the curry powder and tomato paste and a little water.  stir and cook for a minute before adding the remaining water and a pinch of salt.
  6. Bring to a boil and simmer till the potatoes are cooked through.
  7. Once the potatoes are cooked, stir in the coconut milk.
  8. Taste and adjust salt

NOTES:

* Supermarket smoked tuna are really difficult to slice. To make it easier to slice, place in a bowl or tray and pour boiling hot water enough to cover it, leave to soak for about 10 minutes, drain and slice.

** To make coconut milk using coconut powder ( I use Maggie, mix 3 tbsp powder in 1/2 cup water)
