Coffee Caramel Pudding


I love ice milk coffee and I love caramel pudding. Caramel pudding is the Maldivian version of creme caramel where sweet condensed milk is used to make the pudding base. The same goes for the milk coffee where condensed milk is added to coffee and served cold.

So when I made caramel pudding I decided to add in a teaspoon of coffee ( I used Nescafe') into my batter. The result was delicious!

When cooking the pudding, it has to be cooked in a hot water bath, like this. Boiling hot water is poured into a tray with the pudding tray inside, as shown below. The water level outside should come to half of the side of the pudding tray.

Coffee Caramel Pudding

Ingredients:

For the caramel
  • 1/3 cup sugar
  • 2 tbsp water
Pudding
  • 6 eggs
  • 1 tbsp sugar ( optional)
  • 1 can condensed milk
  • 1 tsp vanilla essence
  • 250 ml hot water
  • 1  teaspoon coffee powder ( I used Nescafe')

Instructions:

Pudding
  1. Prepare the pudding base by dissolving the coffee into the hot water and letting it cool.
  2. Whisk the eggs and sugar ( if using ) and then mix in the condensed milk and cooled coffee mixture.
  3. Stir in vanilla essence and set aside while you get the caramel ready.
Caramel
  1. Place the sugar and water in a small saucepan ( please don't use a nonstick as you might not see the sugar caramelize and end up burning the whole thing)
  2. Place the pan over medium heat and cook till the sugar caramelizes. 
  3. Do not be tempted to stir with a spoon. It will change color slowly. A little swirl of the pan is ok.
  4. Once the sugar caramelizes, pour it carefully into a 6-cup capacity round or oval heatproof dish or even a baking tin.
  5. Pour the pudding base you prepared earlier into the dish/tray.
  6. Now, preheat the oven to about 180-200 degree C.  Once it is hot, place the pudding dish inside a larger oven tray and fill the outside tray with boiling hot water, until the water comes up to half of the side of the smaller pudding tray. 
  7. Carefully place the whole thing inside the oven,( middle shelf) and bake for 30-45 minutes till set. 
  8. Or you can even steam it in the steamer on the stove top. Cover the pudding with foil, place it inside the steamer and steam for 45 minutes. 
  9. Once its set, remove and let it cool. Run a knife around the edges, place a plate on top and carefully turn it upside down onto it.

  3. That looks so lipsmacking! I have tried with condensed milk once and I felt it was too sweet to my liking... maybe must try it again... :)

  4. It looks yummy. I love the organic coffee caramel pudding. The combination of coffee with caramel is just wow. I never tried it at home but now I will try it
