Teriyaki tuna with broccoli and garlic rice


Rice bowl meals have started to be something I love preparing. There is something comforting about eating a meal that contains everything you need: grains check, protein check, vegetables check. Usually, it's water to wash it all off although pudding is often there for dessert.


Anyway, I was browsing around the internet for a recipe to try for dinner. Had my mind set on making something with tuna steaks and happened to find a recipe for teriyaki tuna. I have stayed away from teriyaki sauce as it requires sake and mirin. But this particular recipe didn't use it so I decided to give it a go.

I used one large frying pan for all the steps. So really it's quite easy to make. First toast the sesame seeds, then cook the broccoli and then toss in the sauce later on.

Then you move on to cook the tuna.  Wash the pan after the tuna is cooked, the finally make the garlic rice.


As you can see the soy sauce that I have used is quite dark but it is actually a light soy sauce. I used a Chinese brand of light soy sauce.  I have noticed that different brands have different concentrations of soy sauce. So I would say got this one use a light soy sauce that's not too light or too dark. If too light use an extra teaspoon of dark soy sauce.
I used small tuna fillets and cut them into small steak pieces.

The garlic rice is a recipe inspired by this delicious garlic rice I had at  Blood Orange, a local restaurant. I don't know about you I love garlic!. Especially when used in pasta or roasted.

As you have noticed I haven't mentioned salt in any of these ingredients. Because soy sauce and oyster sauce are both quite salty I didn't use any salt.

So give it this delicious bowl of goodness a try :)

Teriyaki tuna with broccoli and garlic rice


Teriyaki Tuna
  • 4 small tuna steak pieces or 1 small fillet of tuna cut into 8 slices.
  • 3 tbsp light soy sauce
  • 1/2 tsp sugar
  • pinch  ground black pepper
  • 2 cloves garlic, grated 
  • 1/4 tsp grated ginger
  • 1/4 cup water
  • 2 tbsp  sesame seeds
Broccoli in oyster sauce
  • 1 small head broccoli cut into florets
  • 3-4 tbsp oyster sauce
  • 1/4  cup water
  • 1 clove garlic
Garlic rice
  • 1 1/2 cups basmati rice,  cooked and cooled down ( can use left over rice)
  • 2 large cloves of garlic, sliced thinly
  • 1 /2 tbsp light soy sauce

Instructions:

Broccoli in oyster sauce
  1. Take a clean dry frying pan and start to warm it up over medium-high heat. Add the sesame seeds and toss it around until they start to turn golden. Remove to a bowl and set aside.
  2. Add water into the pan ( I used a deep frying pan), enough to cook the broccoli. Add salt and once it starts to boil add the broccoli and cook for 3-5 minutes. Remove the pan drain the water and rinse the broccoli under running tap water. Set aside in a colander to drain any excess water.
  3. Place the pan back on the heat with a little oil ( 2 tbsp) and garlic. 
  4. Once the garlic starts to give its aroma, add oyster sauce and water and pepper and cook a few seconds before adding the broccoli and tossing it around to coat with the sauce. 
  1. Mix soy sauce, sugar, garlic, ginger and water in a bowl.
  2. Place the tuna in a glass bowl or ziplock bag or plastic container.
  3. Pour the sauce mixture over the tuna pieces and leave to marinate for an hour. If for longer, keep in the fridge but take it out 30 minutes before cooking.
  4. Heat the frying pan again add 2 tbsp of corn or any vegetable oil.
  5. Place the tuna pieces neatly in a layer and cook 2-3 minutes on each side on medium-high heat. Cooking time depends on the thickness of the fillet as well.
  6. Remove once the pieces are cooked and set aside.
Garlic rice
  1. Give the frying pan a good rinse and add 3 tbsp of vegetable oil.
  2. Add the garlic slices and place on the stove top over medium heat. 
  3. Once the garlic starts to turn golden, remove the garlic slices using a spoon. Dont remove the oil.
  4. Into the hot garlicky oil add the cold cooked rice ( make sure the rice grains are nicely separated ). 
  5. Stirfry the rice in the hot oil and add the soy sauce and return the fried garlic back into the pan. Toss well and spoon into serving bowls.
  6. Arrange the tuna slices on one side of the bowl. Then the broccoli along with any sauce. Sprinkle the sesame seeds over the tuna and a little over the broccoli. 
  7. Enjoy!

NOTES:

As some light soy sauces can be too light, add 1 tsp of dark soy when making the teriyaki sauce
