Yogurt And Berry Terrine with Strawberry coulis
Eidhul Adha is here!! So it is pretty chaotic on the streets of Male' everyone is running or rather zooming around trying to head to the islands or resorts or abroad for Eid holidays.
So for this Eid, I have a very elegant dish, quite a show stopper I would say one that took me ages to perfect. Great dessert to serve for a special occasion.
I love berries, but they are so expensive here in Maldives, I mean its not something you can buy every day to enjoy.. The first time I ate this terrine was in Bandos Island Resort and the taste just left its mark on me that I finally realized maybe its really a yogurt panacotta. After a lot of trial and errors, I finally found the perfect recipe. I made this for my in-laws once, when they came over for lunch. They love to eat ( thank god!!! I hate picky eaters) and dessert is one thing they all look forward to. So this was a nice light dessert to enjoy after a heavy meal. I bought a berry smoothie mix from the Fantasy Store and added some extra strawberries. If you have fresh vanilla beans, please use it here, if not use vanilla extract or essence.
Recipe : Yogurt and Berry Terrine with strawberry coulis ( yogurt panacotta recipe from Smitten Kitchen)
250ml cream ( I used whipping cream )
3 tbsp milk
1 cup sugar
1 vanilla bean or 1 tsp good quality vanilla essence
2 cups plain yoghurt ( greek yoghurt if available), whisked
3 tsp gelatin
1 cup mixed berry juice (Lacnour)
3 tsp gelatin
1 cup mixed berries
extra cup of strawberries and a few tablespoons of sugar for the coulis
First, take a small loaf pan, and line it with cling film so that there are a lot of cling film overlapping. Take 1/2 cup of berry juice pour this over the gelatin (3 tsp) and set aside for it to " bloom". While this happens, gently heat the rest of the berry juice till just hot. Stir in the gelatin into this and mix well to dissolve. Add a spoon of this mixture to the bottom of the prepared tray and then arrange the berries on top,
and pour the rest of the berry juice over the berries and pop in the fridge to set.
While the berry half sets, warm the cream, along with the seeds from the vanilla pod, if using. Let the mixture just start to bubble. Place the remaining 3 tsp gelatin in a small bowl, pour 3 tsp milk and let it bloom.
Stir in sugar into the cream and stir to dissolve. Remove from stove, stir in gelatin and use a whisk to help it dissolve faster. (Add vanilla if using vanilla essence). Cool slightly.
Now whisk the mixture into the yogurt and stir well. Pour over the now almost set berry mixture. Let it chill in the fridge for 4 hours or so till set.
Prepare coulis by blending strawberries with enough sugar to sweeten it and pass through a sieve for a smooth sauce or just serve after blending.
Carefully remove the terrine once it sets and cut it into slices with the strawberry coulis.

This is my kind of dessert! I love it! I am already thinking about making this with blueberries, strawberries are out of season now here, but my freezer is full with blueberries I picked last week, 7 kg of them.
