Asparagus Omelette ( a Curtis Stone recipe )


Eggs, yummmm... I love eggs,  in any form, that is cooked in any form.  I saw this recipe on Curtis Stone's website, and was like now this is something I would love to eat especially when alone at home.  So once the boys were in school I   whipped up this omelette just for me. I threw in a a bit of meat in the form of processed luncheon meat a form of salami.
Its quite a straightforward recipe, I made it the lazy way by throwing everything in and then adding the eggs. No gouda so I  choose not to add any cheese at all.   A nice little snack to eat. Who says eggs are just for breakfast.

3 eggs
about 12 baby asparagus
2-3 slices of Robert's Luncheon meat (optional)
oil
salt
pepper

Cut the asparagus into three. Chop up the luncheon meat.

Heat a 9- 10 inch frying pan with 2 tbsp oil, add the asparagus and luncheon meat if using, and stir fry for a few minutes.

Whisk the eggs with a fork, season with a little salt and pepper, and stir into the pan, Stir gently so the egg is evenly distributed. Cook over a medium heat. Can finish off in the oven but mine cooked well after I covered it for a minute with a lid.

Remove to a plate and enjoy :).

  8. I love it when you can make something just for yourself and indulge:) This is a beautiful dish to treat yourself with. Love the long stalks of asparagus and the bits of salami. With all that flavor you certainly don't need any cheese.
