Pancakes , Three Ways..

                                                                                       


School holidays are soon to be over, so we visited Sri Lanka, with my whole family, except my hubby who is away. My father had to undergo heart bypass surgery and thanks to the wonderful care of the doctors and nurses of Asiri Surgical Hospital, he is now recovering very well. Even though it was a stressful trip with hospital trips and also babysitting the kids while we took turns watching the kids,  as my sisters and their families went as well, we managed to enjoy ourselves as well.

Got to taste some delicious Sri Lankan food, the boys love string hoppers and hoppers so had no trouble when it came to food. I have to say I was quite impressed with the new changes and development in the city, having visited Colombo, the capital, 11 years ago. 

\Now let's start this year with a nice recipe right?  Pancakes for breakfast anyone??  Now I am not the kind of mother who wakes up early and whips up a hot batch of pancakes, nope! breakfast is more bread with the usual condiments during weekdays, but come weekends it's more of a leisurely space. Usually, I  buy a box of those Betty Crocker or Pillsbury pancake mix, until I discover the perfect basic pancake recipe on the Martha Stewart website and have never looked back. I usually mix the dry ingredients the previous night before bed, cover and leave it in the kitchen, then add the dry ingredients in the morning.   Here I have three ways I have served them, plain with honey the boys' favorite with chocolate chips or if I am in an indulgent mood with fresh blueberries.

Recipe : Basic Pancakes recipe taken from  basic pancake recipe at Martha Stewart.com

1 cup plain flour, sifted
2 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 cup milk
2 tbsp oil (I used sunflower oil)
1 egg
extra butter to grease the pan

for flavourings: , chocolate chips, blueberries or a little vanilla essence, a few drops.

Sift flour, in to bowl, add baking powder, salt and sugar, whisk and make a well in the centre.

In a measuring jug, mix egg, oil and milk, ( vanilla essence if using).  Whisk well and slowly add this mixture into the well made in the flour mixture. Whisk in carefully while gradually adding the milk . Don't over-mix, but it should be lump-free.

Heat a small frying pan, preferably nonstick, add a tiny bit of butter, and swirl it around. Add a ladle of batter and cook over a medium flame. Once little bubbles appear on top of the pancake, flip it over and cook the other side. Remove and do the rest of the batter. Enjoy warm drizzled with honey.

To make chocolate chip pancakes, once you add the ladle of batter, add chocolate chips, so the pancake looks more like a chocolate chip cookie. Flip and finish cooking.

The same you do when making blueberry pancakes.  I prefer this method to adding them to the batter and then ladling them into the pan. But its totally up to you.

  5. I hope your father is feeling better. Lots of post operative care and diet certainly needs to be looked into. I know it can be a stressful time for the whole family-so do take care of yourself too.

    Yeah... Don't buy pancake mix. These that you made from scratch must be equally awesome!!!
