Kandoo
Today I am going to show you something that arrived at our house a long time ago. I kept putting off the post and now I have a little time to write about it so here it is. It is becoming a rare thing now but a friend of my father's sent him this little present. A bag of cooked Kandoo or mangrove beans.
According to my sister's mother in law who was visiting us then explained that it takes some time to cook them. It is boiled several times, each time the water is changed. Once cooked it's soft but slightly al dente'. It has a starchy texture and taste and is served with freshly grated coconut and garudhiya a clean colourless broth made with tuna fish and salt, a big dollop of lonumirus and a squeeze of a lime.
How interesting! Have never heard of or had these exotic items.
