Baked Chicken Drumsticks


My boys have two different personalities , while my little guy is quiet and thoughtful and would rather sit and readm while my fussy one cant sit in one place for a minute . Little guy is tall and thin   while fussy one is smaller and a bit more filled up with  round cheeks that seems to grab attention when he is in room.

Its the same when it comes to eating,  little guy prefers his vegetables and creates less fuss but  is a bit picky when it comes to eating meat,  while fussy one can get pretty picky with his vegetables. Now if you are wondering where I am going , well this baked chicken recipe was a winner with these two boys. Even the little guy who just wouldn't stop  complimenting me about it  ( big pat on the back for it) .

Its something I came up with quite by accident. I wanted to make tandoori chicken but then thought maybe I will make it my own version and just added a little of this and little of that and make the coriander and yogurt the star ingredients .  As you know yogurt is good for you and full of calcium and protein (perfect for active and growing kids),  and its this month's theme at the little thumbs up event for this month

Recipe : Baked Chicken Drumsticks

8 chicken drumsticks, skinned and the flesh slashed a bit so the marinade can get more into the meat.
2-3 cloves garlic
1/2 piece ginger
a nice big bunch of coriander leaves and stalks
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground black pepper
1/4 tsp ground red chilli powder
2 tbsp oil
3-4 tbsp plain yogurt
1/2 tsp sugar
salt

Place all the ingrediants ( except the chicken ofcourse) in a blender or grinder and blend till smooth. 
have a little taste adjust salt . 

Put the chicken in a glass bowl or plastic zip lock bag and pour the marinade in and really mix it well. Leave to marinate for atleast 2 hours or over night

Preheat the oven at 200degree celcius  gas mark                          ,  take the chicken drumsticks out and place in a roasting tray or baking tray, and bake for  45 minutes till cooked through. 

Enjoy!!

Ps I think this would work on a spatchcocked chicken, and grilled on a barbeque as well.
