Chickpea Salad



One thing that keeps me from making salads is I can't seem to be able to balance the dressing.  I keep meaning to make a salad using chickpeas as the boys love them and they are so healthy for you.
 After checking out different recipes I decided to play it safe and stuck to the basic vinaigrette recipe, although I am still not sure about its balance of taste, I didn't get much complain, even a little fussy one ate it.

Recipe  : Chick pea Salad
Serves 2-4 as a side or 2 as a light lunch

1 cup Chickpeas ( canned or dried ones, pre-soaked and boiled till tender)
1 big tomato , deseeded and chopped
1 small cucumber , chopped
1 small onion finely chopped
1 green chilli, finely sliced
3 tbsp olive oil
juice of 1 1/2 limes
1/4 tsp mustard ( I used the American one although Dijon is the best to use for dressing I heard)
1 clove garlic, finely minced
salt and pepper

Add the cucumber, tomatoes, onions, chillies and chickpeas into a mixing or salad bowl.

 In a small bowl or empty jam jar (that's been washed and cleaned ) add olive oil,  lime juice, mustard and garlic, pinch of salt and pepper, Whisk or shake the jar ( after screwing the lid of course).  Taste!!  Adjust seasoning and lime juice.

Pour the dressing into the salad ingredients and mix well. Taste again and adjust to your liking.

 Let the flavours develop for 10 minutes by letting it chill in the fridge before serving.
