Rice with Sausages and Peas

I am a big fan of Gordon Ramsay :) , my hubby calls him the wrinkly old man but still I think his programmes are the best. Whether he is screaming at chefs in Hell's Kitchen giving people a piece of his mind in Nightmare Kitchens or being extra sweet and nice on the Ultimate cookery course, to me,  he turns out to be a great teacher and chef. His ultimate cookery course is a great book with great recipes and tips although I did wish it had more illustrations of some of the methods. This recipe is one I picked up from this book.  I used precooked sausages, not fresh since we don't get fresh over here.

Recipe : Rice with sausages and peas slightly adapted recipe of Gordon Ramsay's Spicy sausage and rice from his book the Ultimate Cookery Course

1 small onion, chopped
2 cloves garlic, chopped
1/2 red bell pepper
1 pkt Gills chicken and garlic sausages, sliced.
1 cup basmati rice
1/2 cup frozen peas
1 plum tomatoes, chopped
handful of coriander leaves chopped
1 tsp smoked paprika ( or regular paprika)
1/4 tsp ground black pepper
1/2 tsp chilli flakes
1 green chilli chopped ( optional)
1 chicken stock cube
2 cups hot water
olive oil

1. Heat olive oil, soften onion,  bell pepper and garlic.

2. Once the vegetables are softened, add sausages and stir fry till the meat browns a little, add all the spices. Add rice and stir to coat the rice in the mixture.

3. In a measuring jug dissolve the stock cube in hot water. Stir this into the rice, season with salt and cook over medium-high heat, lid off. As the water starts to evaporate from the top, add the peas, tomatoes and coriander leaves put the lid on, bring the heat to the lowest and cook for 5 minutes.

4. Remove lid after  5 minutes, and check if the rice is cooked, (add a little extra hot water and put the lid back on if not). Switch off and fluff up the rice and serve.

  11. I like him too! He can be quite mean though - it's kind of funny at the same time I feel sorry for whoever he's yelling at and thankful it's not me. :-) This looks flavorful and delicious - I never tried any of his recipes.
