Rice and Pea Pilaf
Or is it pilau? According to my sister, it is the same thing, just the difference of where its made. Anyhow, I wanted to jazz up my rice as rice is something I make every day for lunch so when it was time to serve it for dinner wanted to prepare it in a different way so the boys don't get bored of eating the same thing twice a day.
The rice turned out beautifully and nice and fluffy and the boys polished if off without much of a fuss.
Recipe : Rice and Pea Pilaf
1 cup basmati rice
3/4 cup frozen green peas
1 small onion sliced
2 bay leaves
4-5 pods of cardamon, ends snipped off
2 inch piece cinnamon
2 cups water
2 tsp ghee or oil
salt
1.Wash basmati rice in several changes of water, drain and set aside
2. Heat a deep frying pan or saucepan add ghee and let it melt. Add onions and saute till the onions go soft and start to turn golden, add bay leaves, cardamon and cinnamon, fry for another 1-2 minutes.
3. Add rice and stir to coat the rice in the ghee or oil, add 2 cups water and season with salt and bring the water to a boil, bring the heat down to a simmer then cover and cook for 5 -8 minutes. Remove lid stir in peas, put the lid back on and cook for a further 5 minutes.
4. Switch off the heat and leave it like that for 5 minutes and then remove the lid fluff it up with a fork and serve.
