Pannacotta with Strawberries

                                                                                    

I have always wanted to try panna cotta, a lovely milky dessert.  I discovered this super easy recipe on  David Lebovitz's blog, and it turned out perfect. It is a great recipe for kids as well as it is an all-milk dessert, you can serve it with fruits or as it is. Sometimes I buy 200ml packets of cream which means when measuring  I am a few tablespoons short of making 2 cups, so I make it up to 2 cups mark on the measuring cup with a little full cream milk.
I used half of the required amount of ingredients for making my Pannacotta's although I used a little bit more sugar like mine slightly sweet.

Recipe : Panna cotta with strawberries recipe from Perfect Panna Cotta from David Lebovitz
for  about 4 -5 serves

2 cups cream 
1/2 cup sugar
1 tsp vanilla essence or you can use a vanilla bean if available
2 tsp gelatin powder 
about 3 tbsp cold water

1. Measure 3 tbsp cold water into a small bowl, sprinkle gelatin on top and leave for the gelatin to bloom.

2. Pour cream into a saucepan, (if using the vanilla bean, slit it in half length wise scoop the seeds out using a sharp knife and add this along with the pod into the cream. Don't boil the cream, just to heat it up. Add sugar and vanilla essence,( using essence).  Dissolve the sugar but don't let the cream boil. Switch off heat. (Remove the vanilla bean)

3. Stir in the gelatin, and stir to dissolve into the cream. When you don't find little dots when you lift your spoon then its dissolved. 

4. Pour into ramekins, or little dessert glasses or even into one glass bowl.  ( to speed up setting place bowls in the fridge to chill before you pour the panna cotta mixture in.) Chill for about 4 hours. Or make it a day ahead of serving. Serve with macerated strawberries given below.



Macerated strawberries

1 punnet of fresh strawberries or half a frozen strawberries packet thawed.
1 tbsp caster sugar
  juice of 1 orange 

Chop the strawberries roughly and mix in sugar and orange juice. Leave in the fridge for the flavours to develop for about 30 minutes to 1 hour.


Note:I do not like to preach but I recently learned that Gelatin is made of animal fat mainly cows and pigs so being a Muslim and to all Muslim readers I would advise you to check for the halal sign or read the ingredients on the gelatin packet and make sure its made of halal meat, before you purchase it.
