Spicy chicken pizza

                                                    

I love homemade pizza, even if I go to Pizza Hut I order pasta dishes or head to the salad bar. I made this pizza last week, and it tasted quite delish so I am posting it. I meant to make this with just chicken but ran out of chicken so I used a halal beef salami that comes in a tin called Robert: luncheon meat. It is quite tasty. Anyway, give it a try.

Tomato sauce :
2 medium tomatoes,
2 cloves garlic
½ cup fresh basil
1-2 green or red chillies
1 tbsp tomato paste
Olive oil

1. Roast tomatoes in a moderately hot oven, without oil, just sprinkle with salt and chuck them into the oven for about 30-45 minutes, till they go soft.

2. Place all ingredients in a food processor and process with a few splashes of olive oil. Taste, adjust seasoning, add more chilli if you like it super hot!. Set aside.

Dough:
1 ½ cups plain or all-purpose flour
½-3/4 cup tepid water
½ tsp sugar
1 tsp yeast
Salt,
 2 tbsp olive oil

1. Dissolve sugar into the water, sprinkle with yeast and leave covered for a few minutes. Sift flour, and add salt, make a well in the centre and add olive oil in.

2. Pour the frothy yeast mixture into the well and start kneading. You should have a nice firm elastic dough. ( if too wet sprinkle a little more flour, too dry add a little, very little tepid water. )

3. Oil your bowl with a little olive oil and place dough in pat around the dough so it also has an oily film on it, cover the bowl with a clean kitchen towel and leave in a warm dark place in your kitchen, for a couple of hours.

For toppings:
2 boneless chicken breast, skin removed
Salt
Cajun spice mix ( or if you don’t have it, a mix of chilli powder, cumin, dried herbs, lemon or lime zest and salt )
Oil
A few slices salami or sausage ( optional), sliced thinly
8- 10 pitted black olives, sliced
½ a red or green bell pepper. Deseeded and white membranes were removed and cut into strips.
Cheddar cheese, grated or a mixture of cheddar, parmesan and mozzarella.

1. Rub the chicken breasts with the spice mix and a little oil. Heat a nonstick frying pan or grill pan and cook till nice and tender. Remove, cool and slice into thin slices.

2. Preheat oven till very hot, and it is good to heat your pizza tray even.

3. Once the dough has raised and doubled in size, take it out, punch it down, and roll it into a round or rectangular shape, according to whatever size you like. I like thin crust. If you like a thicker crust, roll it, place it in your tray and leave it to rise again for a few minutes. Place on a lightly oiled tray, use thin trays, meaning not the usual cake-baking trays. Or get a pizza pan. Stretch the dough to fit into the pan.

4. Spread your tomato sauce all over the dough, a thin layer.


5.Layer your chicken and salami( if using) , peppers, and olives. Sprinkle lots of cheese on top.



A touch of pepper and more Cajun seasoning, and pop into the oven. Bake till nice and golden and with melted golden cheese top.
