Lemongrass and Lemon Granita



Well, I think you would call it a granita as sorbets also contain eggs and it's definitely not an ice cream :). Both Kristy's and Ancoo's blogs had me craving for something cold and refreshing as the past week has been blistering hot although the weekend started with a nice breeze and it is been pouring rain today.

The recipe is originally from an Indian food writer , Tarla Dalal's recipe. I saw it in one of her magazines and its called a lemon grass tickler. My family loved it , especially when served with lots of ice cubes. So this week I decided to freeze the whole thing and pulse it a couple of times with a blender and it turned out to a slushy drink. Or if you prefer a granita.

You will need:

1/2 cup chopped lemon grass( fresh) ,
1/3 cup water
Juice of 2 lemons
1/3 cup fine sugar
600 ml 7up or sprite or cream soda

1. Place lemon grass and water into a blender and pulse a couple of times.

2. Strain it into a bowl, and make sure to squeeze as much liquid out as you can. Mix in lemon juice and the 7 up or Sprite and sugar. Stir to dissolve the sugar or pules a couple of times in the blender again.

3. Remove any froth on top and then pour into a freezer-proof container with a lid.

4. Place in the freezer. Take it out after about an hour or so , it will start to form crystals on top, pour it into the blender blend once pour it back into the container and re-freeze. Do this every 1 1/2 hours and then once it is a thick slushy mix, you can either serve it now with a big fat straw or freeze it again and serve once its completely frozen. I think I prefer it more like a slushy mixture, rather than the lazy way of eating with a spoon.

Or instead of freezing it and going through the whole trouble of making the slush, you can also serve it like the original recipe like a drink with lots of crushed ice
