Cheesy chicken with spicy ramen


Ramen noodles started appearing in the Maldives sometime in 2019, and my first experience with these instant noodles didn't go so well as I choose to make one with the spiciest of chilli and ended up throwing the whole thing into the bin ( I know!) because it was so spicy no one could handle it. 

Anyway, I love watching some of the Korean YouTubers such as Maaji, W Table and nowadays Hamimommy. One of the recipes that caught my eye once was this chicken dish which is cooked on the stovetop, then loaded with lots of mozzarella cheese and then broiled. The cheese melts into the spicy sauce and is all oozy and stringy. 

My little one loves noodles so I came up with this dish where I  topped the ramen noodles with chicken which I marinated with the chilli sauce packet found in the noodles packet and then topped with cheese. 

Speaking of the little one, I have a question for my readers or silent readers. When someone tells you we are going to teach cooking for life skills what comes to your mind? and what kind of things do you expect your child to learn? I am just curious what kids learn in other countries as I know there are different cooking clubs and activities in schools. 

Anyway back to my recipe! The result was so good and he loved it!


For the ingredients I used a packet of Ramen noodles, I had hot chicken flavoured with tomato, you can use any of your favourite spicy noodles.  1 large spring onion, some mozzarella cheese, boneless chicken cut into small pieces, a little soy sauce,  some garlic, green chilli and some oil. 


I cooked the noodles in lightly salted boiling water according to the instructions. Then remove and mix with the seasoning packet. 

The chicken I marinated with the chilli sauce packet found in the noodle packet, along with the garlic and some soy sauce.  10 to 15 minutes to marinate is fine. 


After marination, heat the frying pan with a few tablespoons of oil add the chicken and cook on high heat to sear the meat first then cover and cook.  

Once cooked through, remove and add the noodles into the pan, tossing it around so the sauce left in the pan gets mixed with the noodles.  Then top with the cooked chicken, then some leftover marinade, and a little water. Cover and cook for a few minutes. 


Then top with cheese, you can use grated or cut into pieces like I have done. Then place under the broiler in the oven and broil for a few minutes until the cheese melts and starts to colour.  


Remove and top with spring onions and chilli spices and enjoy ASAP as the cheese needs to be oozy and stringy.

Cheesy Chicken with Spicy Ramen

Ingredients

  • 195g-200g boneless chicken breast piece.
  • 1 packet spicy Ramen ( I used a tomato-based packet)
  • 1 large spring onion, sliced, green part only.
  • 1 chilli, thinly sliced
  • 2 large cloves of garlic, grated
  • 1 tsp light soy sauce
  • ¼ cup water plus extra to cook noodles
  • A  generous handful of mozzarella cheese, coarsely grated
  • 4 tbsp oil
  • Pinch salt

Instructions

  1. Cut the chicken into bite-size pieces, place in a bowl and add garlic, the chilli sauce packet in the Ramen packet, soy sauce and a tiny pinch of salt and mix to marinate for a few minutes.
  2. Cook the noodles in boiling salted water until cooked, drain and mix in half of the seasoning packet.
  3. Heat a large frying pan, add oil and then add the chicken along with the marinade and fry on high heat first to sear the chicken. Then toss and then cover and cook on low heat for about 5 minutes.
  4. Once the chicken is cooked through, remove the chicken into a bowl, add the noodles into the pan with a tablespoon of water and stir it around so the noodles get mixed with the sauce that is left in the pan. Place on the stovetop, on low heat. Arrange the chicken on top of the noodles, add about ¼ cup of water into the bowl that contains the chicken, swirl it around and pour the contents into the pan.
  5. Top with cheese, and place under the broiler for 5-8 minutes until the cheese is melted and starting to colour.
  6. To broil use the top heater of the oven, set the top heater on high, and once hot, place the frying pan on the highest shelf closest to the heater.
  7. If using a frying pan with a plastic handle, cover the handle with aluminium foil and then place it in the oven.
  8. Once the cheese melts, remove the pan top with spring onions, and chilli slices and serve immediately.

  1. I don't eat ramen, but I bet it would be just as good with rice noodles or udon! So appetizing and moreish, Nammi.
