Cake folhi ( sweet pancakes)
The batter is quite thick almost like a pancake batter, but unlike the regular pancake, this is folded in half once the bottom is cooked rather than flipping it.
This give it a slightly soft almost creamy texture when you bite into it. My sister gave me the recipe.

Cake folhi
Ingredients:
- 200g flour
- 200g sugar
- 2 eggs
- 1 tsp baking powder
- 1 tbsp margarine
- 1 tsp vanilla essence
- 3/4 cup water
- a few drops of yellow food colouring
- margarine to grease the pan
Instructions:
- Whisk the margarine and sugar till creamy.
- Add eggs and vanilla and whisk again.
- Then sift in flour, and baking powder, gradually and gently mix. Then pour water and food colouring and gently mix till you get a fairly smooth batter. Let it sit for a few minutes, about 10 minutes
- Heat a small frying pan and brush some margarine on the surface of the pan with a pastry brush or tissue.
- Pour a ladle of batter and smooth it into a round. Let it cook on low heat.
- Once a few pockets of bubbles start to appear, and the top is half-cooked, fold the pancake in half and flip it to ensure the batter is cooked. Then remove to a plate. Repeat the same with the rest of the batter.
- Enjoy warm or at room temperature.
Soft and delicious! Would be wonderful to enjoy them with some fresh seasonal berries!
