Cake folhi ( sweet pancakes)




 I don't know when these particular pancakes started to appear in the cafes and snack shops around the country but it has been around for some time.  These yellow-folded pancakes are not overly sweet but have a cake-like texture.  


The batter is quite thick almost like a pancake batter, but unlike the regular pancake, this is folded in half once the bottom is cooked rather than flipping it. 


This give it a slightly soft almost creamy texture when you bite into it.  My sister gave me the recipe.

Cake folhi

Ingredients:

  • 200g flour
  • 200g sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1 tbsp margarine
  • 1 tsp vanilla essence
  • 3/4 cup water
  • a few drops of yellow food colouring
  • margarine to grease the pan

Instructions:

  1. Whisk the margarine and sugar till creamy. 
  2. Add eggs and vanilla and whisk again.
  3. Then sift in flour, and baking powder, gradually and gently mix. Then pour water and food colouring and gently mix till you get a fairly smooth batter. Let it sit for a few minutes, about 10 minutes
  4. Heat a small frying pan and brush some margarine on the surface of the pan with a pastry brush or tissue. 
  5. Pour a ladle of batter and smooth it into a round.  Let it cook on low heat. 
  6. Once a few pockets of bubbles start to appear, and the top is half-cooked, fold the pancake in half and flip it to ensure the batter is cooked. Then remove to a plate.  Repeat the same with the rest of the batter. 
  7. Enjoy warm or at room temperature.
