Jacques Pepin's no knead bread
So this recipe was in his Fast food my way series where he makes the whole bread in a pot, the mixing, proofing and baking. If you have one of those cast iron or iron pots then that's great but any nonstick pot is fine. If it has plastic handles, wrap the handles with some foil before putting it in the oven.
There is no kneading in this recipe, everything is dumped into the pot and mixed with a spatula or wooden spoon and then left to proof, with the lid on or with a kitchen towel on top for an hour and then, mixed gently with a spoon and then covered and placed in fridge for the night or 12 hours.
Then next morning or after 12 hours the pot is taken out, and popped into the oven and baked 45 minutes till golden. Let it cool in the pot , once it cools it will come off easily.
Its a more cake-like appearance depending on the shape of the pot but can always slice it and serve as for any normal bread and enjoy.

No Knead Bread
Prep time: 14 hour cook time: 45 mins Total time: 14 H & 45 mins
Ingredients:
- 3 1/2 cups flour, sifted
- 2 1/2 cups water
- 1 tsp yeast
- 1 tsp salt
- 1 tsp sugar
Instructions:
- Take a large nonstick pot.
- Add water, salt and sugar and stir to mix.
- Add yeast and then flour.
- Stir vigorously with a wooden spoon or spatula.
- Cover with the lid and leave on the countertop for 1 to 1 1/2 hours.
- Remove lid, stir gently with a spoon. Place the lid back on and put the pot in the fridge.
- Keep in the fridge overnight ( 12 hours).
- Preheat oven to 220 Degree C
- Remove the pot , dont touch the bread dough, remove the lid and place the pot without the lid into the oven and bake the bread for 45 minutes.
- Cool in the pot and run a knife around the edges and turn the bread on to a board and slice and enjoy.
I adore no knead bread. All you need is the patience, and you will have a delicious homemade bread every time.
