Garlic Mashed potatoes



I needed a potato dish to serve my chicken with peas dish. I looked up a few Julia Child recipes and saw this garlic mashed potatoes recipe. 
I never heard of Julia Child until I saw Julie and Julia movie and literally got so hungry while watching it. She is an inspiration to all foodies and cooks. The way she turned her life around with her passion for cooking. Wondering which of her books I should get, Art of French cooking or the way to cook? 
I can relate to both characters in the movie. Julie Powel was searching to make her life meaningful. Plus there are the ever-present and quietly supportive husbands. For me it also shows no one's life is perfect, we may try hard to make it but there will be ups and downs, it's just how you face it that counts.

Anyway, I love a good mashed potato but this one  I would eat straight from the pot with nothing else. It is so good!. The cooked garlic gives a subtle taste. I couldn't help licking the spoon and had to stop when my little one discovered it and decided to follow his mother to have a taste.

Garlic Mashed Potatoes

Prep time: 30 mins Cook time: 30 mins Total time: 60 mins

Ingredients:

  • 600g potatoes
  • 15 cloves garlic or 1 whole bulb
  • 1 tbsp flour
  • 2 tbsp butter
  • 1  and a half cups of milk
  • fresh parsley (optional ) or 1/2 tsp dried thyme
  • salt
  • water to cook the potatoes

Instructions:

  1. Heat a large pan of water, with salt and add the garlic cloves ( skin on) and the potatoes( peeled and cut into large pieces) and cook till soft. 
  2. Drain and remove the garlic cloves from the potatoes.
  3. Cool and remove the skin.  
  4. Heat a saucepan with butter and let the butter melt. Add the garlic and stir it around.  Add flour and stir to mix with the butter. Stir in 1 cup of milk stirring to combine as you add. Cook for 2 minutes stirring constantly, the sauce will thicken. 
  5. Cool and pour into a blender and blend to a puree. Taste, add salt and pepper. 
  6. Mash the potatoes, place in a large pot over a low flame and add the prepared sauce, a tablespoon of butter and the remaining 1/2 cup milk and herbs. Mix well, taste adjust salt and add a little more milk if needed.
