Crazy crust pizza


These are trying times, not many planes and tourists coming into the country, and countries from where food supplies come in are on lockdown. People around the world are in some kind of stay-at-home order. even here in the Maldives the capital island and several islands in the north is in lockdown due to the rising number or covid 19 cases. Have to get special permission from the police if you want to go out and are only given a limited slot and certain days to get out. Praying this virus gets controlled and a cure is found soon. Thoughts and prayers to those who have lost loved ones and praying for speedy recoveries for those suffering from this disease.

So for this Ramadhan, I looked up easy recipes, plus used fewer ingredients.
I know how much people love pizza, especially for Iftar so while looking up pizza recipes I came across a recipe called crazy crust pizza. Believe me, when I say crazy I do mean it's crazy because it takes just less than 10 minutes to whip up this crust.

ingredients for the base

 It is not your regular crust, this one is more a batter. You whip it up, pour it into a prepared sheet pan and spread it out gently.
The problem I had with this was getting the finished pizza out of the pan so here are a few tips after experiencing this pizza.

Use a good non-stick baking sheet. Brush some olive oil or butter or margarine and line it with baking paper. If you don't have baking paper brush with some olive oil or butter or margarine and then dusted with flour, so the whole pan is lightly coated with it. 

After lining the pan, or dusting with flour,


pour the batter onto the tray and spread it thinly.


Use a 15 x10 inch baking sheet. If you have those round pizza trays , use a 10 inch round tray.

I used two toppings on 1 tray, the tuna one is really good so hope you will try it.
Ok, once pouring the batter and smoothening it out, sprinkle the tuna. If using pepperoni or sausage, just add a few slices on top.


 Pop into the oven, lowest shelf for a few minutes, once the base has set, remove from the oven, and spread the sauce on top. ( you can even make this pizza on a stovetop I think, just lightly oil a large non stick frying pan and place on the stovetop, over low heat. )

You can use my homemade sauce or store-bought pizza sauce or try this if you only have tomato paste. Sprinkle any remaining tuna mix or pepperoni, a few slices of capsicum or banana peppers and cheese.


 I used a mixture of cheddar and mozzarella. You can use whatever cheese you have, even those sliced sandwich cheese slices are ok in this situation we are in.

Pop it back into the oven and bake it till the cheese is bubbling.
Remove and let it cool a little, slice, and serve.

Crazy Crust Pizza

Prep time: 30 mins Cook time: 20 mins Total time: 50 mins

Ingredients:

Pizza Base
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1 level teaspoon salt
  • 2 eggs, beaten
  • 3/4 cup milk
  • 1/2 tsp mixed dried herbs(optional)
  • 1/4 tsp coarse ground black pepper
  • 1/4 tsp chill flakes
  • 1 tbsp olive oil
Topping
  • Tomato Pizza sauce or pasta sauce. ( read above for options)
  • 2 cans tuna, oil drained
  • 1 small onion finely chopped
  • 1 clove garlic chopped
  • 1/4 to 1/2 scotch bonnet pepper, finely chopped or use 1/2 tsp dried red chilli powder or flakes or  a dash of Enzi githeyo mirus sauce, if you dont have fresh chillies.
  • 6 curry leaves , finely chopped
  • 1/2 tsp coarse ground black pepper
  • salt to taste
  • 1 capsicum /banana pepper thinly sliced
  • Cheddar and mozzarella grated
  • olive oil and flour to line the tray (or use baking paper )

Instructions:

How to cook Crazy Crust Pizza

Base
  1. Sift flour into a bowl, along with salt and baking powder. Make a well in the centre. 
  2. Mix eggs, milk and oil in a jug and pour the contents into the well. Mix well and set aside.
Topping
  1. Heat a  frying pan with some olive oil, add the onions and saute' till softened and translucent. Add garlic, curry leaves and scotch bonnet and stir. 
  2. Flake the fish in a bowl and mix a pinch of salt and black pepper. Transfer this to the frying pan. Fry the mixture till the tuna mixture is quite dry, and fragrant. Remove and cool.
Assembling and baking the pizza
  1. Preheat oven to 180 - 200 Degree C.
  2. Oil and line a 15x10 inch baking sheet or oil and dust with flour. (read the explanation above about why this is necessary and how to do it)
  3. Pour the prepared batter into the tray and level it gently.  
  4. Sprinkle the tuna mix all over the batter, don't press. 
  5. Pop into the oven and bake for about 8 minutes, till the top is dry. 
  6. Remove and spread the pizza sauce with a spoon, and add any remaining tuna and pepper slices.
  7. Sprinkle with cheese and place it back in the oven to melt the cheese. About another 10 minutes. 
  8. Remove, let it rest for 10 minutes and quickly cut into squares and carefully remove from the tray to serve.
