Rihaakuru Dhiya

A delicious Maldivian favourite
ingredients:
- 1 small or 1/2 a medium onion, thinly sliced
- 1/4 piece scotch bonnet or 2-3 green chillies
- 6-8 curry leaves, thinly sliced
- juice of 1 lime
- 1 cup coconut milk
- 2-3 tbsp water
- pinch of salt
- 1-2 tbsp rihaakuru
instructions:
- Mix the onion and lime juice and a tiny pinch of salt and squash with your fingertips till they release their juices.
- Add rihaakuru, curry leaves, chillies and mix again.
- Add a little water and then finally stir in coconut milk. Taste adjust salt, rihaakuru and lime juice.
- Let the flavors develop for about 10 minutes, then serve with coconut milk rice ( that,s rice cooked in coconut milk) smoked tuna, onion wedges, and moringa leaves.
