Lime Rice
There is a South Indian recipe known as Lemon Rice, and while pondering about a nice but easy way to cook rice for Eid day lunch I saw this recipe on TLC in a programme called Ravinder's Kitchen. I decided to do something quite similar but using lime instead of lemon.
It was a lovely way to jazz up rice and best part is to cook the rice ahead as it's best made with cooled cooked rice.

Serves 4
2 cups cooked cold basmati rice
1 medium onion sliced
2 dried chillies, broken up into large pieces.
1/2 tsp mustard seeds
4-5 fenugreek seeds ( ohbai)
8 -10 curry leaves
juice of 1 lime, should extract 1 full tablespoon
a few tablespoons of water
salt
1/4 tsp turmeric
oil about 2-3 tbsp
Heat oil, add the mustard seeds and fenugreek seeds. Let the seeds start to pop and crackle, yes you will get flying seeds so be careful of flying seeds and don't let them burn as well.

Now add the onions and curry leaves ( there is such a lovely mouth-watering aroma when fresh curry leaves hit the hot oil right?) , let the onions soften, then add the chillies and turmeric, and stir for one minute. Add the lime juice, a nice pinch of salt . Mix then add the rice. Stir well to mix everything, you might need to add a few tablespoons of water. Serve and enjoy :)
I love the idea of flavouring rice with lime and all those wonderful spices.

ReplyDeleteI love lemon rice and you reminded me of my school days when I used to dig into my telugu friend's lunch box when she got lemon rice which is the best one I have ever tasted till date
ReplyDeleteNammi! you just added fuel to my burning crave of my home food! It is been really long since I had this and never occured to make them as I have a picky eater. guess I will make just one portion! and my mom has always used lime as lemon used to be a rare to find thing there! :-P
