Chicken Kebab Rolls


This is something I came up with one night for dinner.  Having lived in Karachi, Pakistan for about two and a half years to do my degree,  I ate quite a lot of kebab rolls, which they served in the university canteen. I remember sitting on hot summer days waving a roll in one hand and trying to stop flies from diving into my soft drink bottle.
This was during 1998, I was back home in one piece and a few kilos heavier by the end of 2000 .  Thinking of all the ghee-laden food still makes my mouth water. But I never could replicate the exact kebab roll so I ended with something like this. A bit more healthier version I think...

Recipe : Chicken Kebab rolls 

275g boneless chicken breast
2 cloves garlic, grated
1/2 " ginger , grated
1 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp ground cardamman
1/4 tsp ground cinnamon
1/4 tsp  ground black pepper
1-2 green chillies, chopped roughly
2 tbps fresh coriander leaves, chopped

Shredded lettuce, fresh onion slices lime juice and Tzatziki  sauce to serve
Flat bread such as roshi, parata,  tortilla or chappati

Place the chicken inside a food processor, chop it up. Add the spices, chilli ginger garlic, coriander leaves and pulse a few times to mix and chop everything up.

Turn it all into a large bowl , and season with salt. I use fine salt so about 1/2 tsp would do I think.
Mix well with your hands and leave to marinate in the fridge for an hour or so.

After an hour. Remove and let it come to room temperature.  Take a metal skewer ( if using wooden bamboo ones soak them in water first or wrap them in foil so they don't burn) Using your fingers, take a generous amount of chicken and wrap around the skewer like a flat sausage. Take a few tries to get it nice and evenly distributed. Too much it might weigh down and fall off.  Repeat with the rest.

Arrange on a metal tray so that its lying without touching the bottom of the tray.
You can cook in a very hot oven or under a grill or even over hot coals on a barbecue pit. Great one to take the next time you head for a barbeque.

In the oven it took about 20 minutes, ( make sure the oven is hot before you put them to cook) . Turn them around so they cook evenly.  Remove when done , and cool a little before you gently ease them off the skewer.

To serve:  Take a flat bread spread with Tzatziki sauce, add lettuce, onion slices ,  break kebab into bite size pieces and arrange on top. Assemble just when its about to eat or just get everything separate and let everyone make their own .
