Repost : Gabulhi Boakibaa ( Sweet Coconut Cake)




I posted this recipe a year ago and took it down. I was planning to upload it after updating the recipe during the Ramadhan month but forgot to upload it.
This past week had been busy, my fussy one turned 3, and had a little family party for him. Doing some sewing, I am not very good at it, trying to figure out how to make shorts so can make some for the boys to wear at home.

Coming back to the recipe,  I made this while I was living in Malaysia. I had a tough time trying to get a gabulhi.  I was able to get one from the Friday market,  although it was still a bit more on the mature side. Once bought one from Tesco, my hubby is quite good at picking a good gabulhi.

If you are wondering what on earth is a Gabulhi , let me explain.  There are three stages of the coconut, one is drinking sweet coconut ( kurumba) with a sweet jelly-like flesh, the intermediate stage  ( gabulhi) where the flesh is slightly sweeter but white and slightly thicker flesh. Then there is the mature coconut that you use for making coconut milk ( kaashi) and other cooking purposes, which has very little water and thick flesh. You can hear the water sloshing around when you shake a mature coconut whereas a drinking coconut does not.

This delicious cake is made using this intermediate stage coconut, although if you can't get your hands on such a coconut use a regular coconut, although the taste might be slightly different.

Recipe : Gabulhi Boakibaa ( Sweet Coconut Cake)

2 cups grated sweet coconut flesh ( gabulhi )
1 1/2 cups sugar
1 cup  plain flour, sifted
2 tbsp rose water or 1-2 drops rose essence
about 3 tbsp water
oil for greasing the pan, use a neutral oil

Preheat oven to gas mark 4.

Place all the ingredients in a blender or food processor (except the oil) till finely ground and mixed well.

Oil a  round baking tray pour the contents in the blender/ processor into the tray and level with a metal spoon. Pop in the middle shelf of the oven and bake for about 45 minutes till the top turns a dark golden colour, and a skewer comes out clean when inserted into the cake.

Remove, cool in the tray, run a knife around the cake, turn it onto a chopping board and cut it into squares, and serve.

  1. I love anything with coconut. Sadly we can't find gabulhi coconut over here, but I will be happy using regular one too. The cake looks delicious.

    You have drafted this post a year ago... Geez! Can't imagine a year can just passed by like this :p

    Nice coconut cake!!! Must be very fragrant :D

    I'm sad too that Robin Williams is gone. He is such a talented man. My fav RW's movie is Mrs Doubtfire and Jumanji I can never get sick of watching these 2 heart warming shows.

  8. there is no liquid to be added to this cake. only 2 tbsp rose water or 1-2 drops rose essence
    about 3 tbsp water is there. will this be enough or is any ingredient missing?

    1. No dear no liquid its a slightly young coconut once you mix with sugar and leave for a few minutes you will notice some liquid forming so just 3 tbsp o water will be just fine.
