Spaghetti With A Simple Mushroom Sauce
Since this was my first time cooking with fresh mushrooms, I wanted to make something simple, so I could actually taste the mushroom. So made this really simple pasta dish using what I had at home.
For 2 :
6 swiss brown mushrooms, sliced
2 cloves of garlic, finely chopped
1 red chilli, chopped
1 small onion or shallot finely chopped
water or stock( about 1/3 cup )
a knob of butter
Juice of about 1/2 a lemon and a tsp of grated zest
a big handful of finely chopped parsley
Spagetti
A big handful of grated parmesan
1. Bring a large pot of water to boil, generously salted, add your spaghetti about 150 g , and cook till al dente'. Drain.
2. While you spaghetti is cooking , heat butter add your mushrooms and stir fry. Stir in garlic, onion , chilli and zest and give a good stir,
Add water, use very little water, the half cup is approximate :), let it reduce. Taste, add salt squeeze your lemon juice ( do not squeeze the life out of your lemon, just a couple of good squeezes )and stir in your parsley. Switch off.
3. Toss your pasta into the mushroom sauce. Finally, add the parmesan and stir well. Serve
I have to say it tasted pretty good :), I didn't have any cream but the parmesan gave it a nice creamy texture.
I Love mushrooms and your mushrooms sauce with spagetti seems really delicious so will def give it a try...
