Tuna and green pea curry

Canned tuna is an essential ingrediant in a maldivian store cupboard. Not just one can but a whole box full. My mum stocks up just before the month of ramadhan, and when ever we go abroad we all leave armed with a case of canned tuna, made in maldives. Its not because its not available its because its a little more cheaper taking a case from home rather as we dont buy just 1 can.

This recipe is a very simple one , a great one to try when you have few items to cook and also if you are someone living along and crave something spicy. My mum makes this for dinner when she doesnt get fresh tuna that evening , sometimes its for breakfast to eat with bread and sometimes she turns this into a sandwich , spreads margerine on the out sides of the bread and then pops them into a sandwitch toaster and toasts them.

You will need :

2 cans tuna, drained and flaked
1 medium onion, finely sliced
5-6 curry leaves
1/2 cup of green peas, fresh , frozen or canned (drain and wash the water off if canned)
2 tsp ground cumin
1/2 tsp ground black pepper
1-2 green chillies , sliced
Juice of half a lemon or lime

1. Heat oil in a large frying pan or wok or a saucepan, add your onions and saute' till they wilt and become translucent.

2. Add your curry leaves and stir fry to release their aroma. Add tuna fish and mix well, add the spices, the green peas, and chillies and stir fry. Stir fry till the tuna starts to brown. If it looks too fry for you , sprinkle a little water to moisten it up . Taste and add salt to taste.

3. Finally squeeze your lemon or lime juice into it , give a stir and switch off.

SErve with any kind of flat bread , or bread of your choice.
