Spanish Omelete
I love eggs!!!. It doesn't matter if it's morning noon or night its one of my comfort foods a nice hearty omelette.
for 2 people
4 eggs
2 spring onions finely sliced, whites and greens separate
1 sausage chopped into cubes
1 small tomato or half a large one, deseeded and chopped
1 small potato, cut into small cubes, boiled
1 green chilli, finely sliced
oil
optional: a handful of grated cheddar cheese
1. Heat a nonstick frying pan with a little oil, and fry your potato cubes and sausages until they brown.
2. Add the white part of the spring onion and stir fry to soften. Stir in tomato and chilli, toss a few times. Spread it out well in the pan.
3. Break your eggs into a bowl and beat them well, season, add cheese if using, and pour it over your mixture in the pan. sprinkle in the green part of the spring onion and shake the pan well to spread out the eggs.
4. Once the bottom is cooked, place your pan under the grill in your oven for about 5 minutes to cook the top. Serve warm or cold
