tomato salad



First of all, Eid Mubarak to all Muslims. This is the second Eid we celebrate.  Had a nice week, no tantrums from my little one and hubby having finished exams means working around the house is a little bit easier with him taking his share of work around the house. The internet stopped me from catching up with the blogging world, and after 4-5  days of no internet connection finally got it back today!!! yey ! so will hopefully get back to you guys soon. 
Don't you just love tomatoes! I love tomatoes, especially cherry and grape tomatoes.  I  made this lovely salad for our Eid lunch with friends and it went down quite well.

1 punnet cherry or grape tomatoes, cut in half
1 medium ripe tomato, roughly chopped.
1 shallot or a small red onion, finely chopped
juice of 1 lime or half a lemon
a green chilli, finely sliced( optional)
a good handful of fresh coriander leaves, finely chopped, skip if you don't like them
extra virgin olive oil or plain olive oil
salt and pepper

1. Place chopped onion in a bowl with lime or lemon juice and pinch or salt. Give a good scrunch and set it aside to release its juices and go nice and limp. about 10 minutes.

2.  Place tomatoes,  chili if using and coriander leaves into a salad bowl. Pour the onion and lime mixture on top and carefully mix with your fingertips. Taste, adjust seasoning, and drizzle with some extra virgin olive oil and chill for about 10 minutes before serving.
