Rice fritters
The biggest problem in every society these days is food waste. Our leftovers have to be turned into a nice little meal. We eat rice very often usually for lunch and sometimes even for dinner. But sometimes I end up with a bit more rice. So instead of throwing it away, I store it in a plastic container in the fridge which I usually turn into fried rice. Recently I discovered these Youtube videos of a Korean lady who makes really beautiful and soothing videos.
Her food videos are a delight to watch. She had this series for eggs where she made different egg dishes and one of them that caught my eye was these rice fritters she made for her child. When she mentioned her picky child actually liked them I decided to give it a try giving it my own little touch.
I have two versions, one is with luncheon meat, something similar to spam, but with beef flavour, ( you can use sausages even) and another is with a little canned tuna.
I used just 1/4 piece of carrot, and 1 1/3 cup rice and added some cheese as well, just a small amount of cheese. even a teaspoon of cream cheese spread or sandwich cheese will work as well. If no cheese at all then leave it out.
The fritters are pan-fried, in a little oil, just a tiny amount enough to coat the bottom of the frying pan. Drop spoonful's, tablespoons for large fritters or teaspoon for smaller ones, gently into the pan, flatten it and let it cook, 2 minutes on each side, till golden on each side.
Yield: 14-16 fritters
Rice Fritters
Ingredients:
- 1 1/3 cup leftover rice
- 1/4 cup grated carrot ( or use any other vegetable you have such as chopped green beans, corn or peas)
- 1 small onion, finely chopped ( or half an onion)
- 1/4 piece of beef or chicken luncheon meat or 1-2 sausages chopped ( see below for the tuna version)
- 2 tbsp grated cheese, or 1 tsp cream cheese or 1-2 slices of sandwich cheese, chopped (optional)
- 2 green chillies, finely sliced or if you don't have any add 1/2 tsp dried chilli flakes
- 1/2 tsp ground black pepper
- salt
- 3 eggs
- 3-4 tbsp oil ( vegetable oil)

How to cook Rice Fritters
- Place the rice, vegetable( carrot in my case), luncheon meat ( or the tuna mix recipe below) cheese, spices, and chilli if using.
- Beat the eggs in a separate bowl and pour into the mix and mix well. Season with a tiny bit of salt, be careful when adding salt if using cheese.
- Place a frying pan over medium heat, add oil and swirl it around to cover the bottom of the pan with oil.
- Drop teaspoons or tablespoons of the mixture, depending on the size you want.
- Flatten it gently with the back of a spoon, and cook for about 2 minutes on each side. Should be golden when done. Remove and place on a kitchen paper or kitchen towel to drain any excess oil. Serve with tomato ketchup or chilli sauce.
Notes:
To make a tuna version, use 1/2 (180g) can of tuna, and drain any oil or brine. Saute the onion in a small frying pan in a little oil ( leek will also work here), with a clove of garlic. Once it's softened add the tuna, and fry till it's cooked through. Stir this into the rice, along with chilli or chilli flakes pepper, salt, cheese carrot or any other vegetable you have, and the eggs.
I hate wasting food! And it's a sin to throw food away. This is a fantastic recipe to use leftover rice or clean up the fridge :-) Have a great weekend, Nammi!
